    Buy Dried mushrooms, You'll thank you! Seriously! Fresh mushrooms have their place for sure, but overall dried are better, imo. Dried mushrooms have so many advantages over fresh that it feels like a no brainer.
    What do you think? Are you going to be switching from mostly fresh mushrooms to dried?
    Dried mushrooms need to be soaked before cooking, and you can eat them plain once rehydrated and cooked... but I like to add a bit of salt but really thats all thats needed because they are too good!

      How are you storing your mushrooms? My mushrooms last 2-3 months… I get them home open them up put them in a brown paper bag. Loosely roll the top closed . I keep them on 2nd shelf in my fridge. Only wash when ready to use . 🍄❤ 🍄
      Ps I live in FL produce doesn’t last here if you don’t store things right.

    I use dehydrated mushrooms all the time, they are a STAPLE in my pantry! While rehydrating I like to add just enough hot water to cover the mushrooms, and I like to add a few drops each of soy sauce, vegan worcestershire sauce, vegetable umami, and a little roasted garlic paste. I typically use these mushrooms with noodles, in omelets, or as part of a bento bowl. Always AHH-MAZING!!

    Flavor intensifies when mushrooms are dried. The ones with cracked caps, flower mushroom, have a sweet savory taste whereas the flatter ones with smooth caps, oak mushroom, have an earthier taste, and there are many other varieties. Good thing is that dried mushrooms rarely expire if kept in cool dry conditions and even fresh ones are easily air dried just by hanging them up by a string.

    I grew up with my parents using dried shiitake mushrooms and yes there is so much more flavour in them and great for making broths/soups/sauces. I tend to barely buy fresh mushrooms now unless I use them right away or for texture/apperance reasons depending on recipe. I normally use canned cremini and mixed frozen for quick meals as they seem to be more convenient and lasts longer and easy to use, idk if it is cheaper but I won't end up throwing out mushrooms in the fridge I don't end up using. I should probably put my dehydrator into good use and just dry my own mushrooms when I see fresh on sale.

    Just dropping a comment to say thank you for the entertainment, the recipies and all the cooking tips and tricks. I've learned a lot and have been intrigued by how crazy and fun you can go with some of the vegan stuff which i used to think was boring food. Been watching your channel for a couple of years on and off but never subsribed till recently, also i loved your fitness journey from a fuzzy papa bear to lean mean cooking machine. Your videos have become a part of sunshine in my life and i mean it. Lots of love and keep doing because you are doing great❤❤❤❤❤❤

    If I want fresh mushrooms for something, I buy them frozen, though I'd rather have dry mushrooms than fresh overall. Home-dried ones are also excellent. I also use mushroom seasoning powder instead of bouillon in just about anything savory. I wish I'd known about it all sooner!

      Dude it's wild how expensive some fresh types are! Lions mane being a big one. Growing shrooms is fun, Ive done it a bunch and I have a mushroom grow chamber I need to get setup when I find the space... but I think for day to day use buying dried is just more economical. Price and life expectancy

    Want to try my sauce for pasta? I just put tomato sauce with garlic and spinach. A lot of spinach then paprika. Then I put some hot chili peppers flakes oregano and tahini when I mix the pasta in the pan. The best is with spaghetti or linguine (bucatini is the max but they are hard to find it). It's so creamy and hot... Believe me I'm Italian I know pasta 😋

    I throw dehydrated mushrooms in my blender, turn them into a powder, and add them to sauces.

    I am the chef de cuisine at a restaurant and we do stuffed mushrooms and i INSIST we use dehydrated shiitakes!
    We rehydrate over night in the fridge in cold water! Its less laborious (albeit boiling water isnt difficult but it also just makes knowing when theyre done easy)
    Then we trim all the stems and cut them up very small and mix them with cheddar, mozzarella, cream cheese, garlic, lemon juice, salt, and pepper and stuff the mushrooms with it!
    We also smoke bison once a week and make tacos with it for the rest of the week and when we get an order we put bulgogi marinaded bison into a pan with some oil, quick sear, then a splash of that umami loaded mushroom water to moisten it up and let it moisten up and soak up that delicious mushroom flavor!

      @@SauceStache in the winter we have a bison wild rice soup and veggie version with mushroom stock! Even for the bison soup we boil the bones and reduce down WAY more than you would normally and then it's 2 cups of bison stock "concentrate" with 8 cups of mushroom stock and then we add all the solids and stuff in. We use it a lot!

    I buy the mushrooms in the bulk bins. I look for the wrinkled, drier ones. Because they weigh less...... I get more per pound than the ones in the package. Those are usually wet and gross. It’s easy to slice them, toss onto a cookie sheet lined with parchment and dry them myself. A food dehydrator runs too warm (at leat mine does).

    I stock up on fresh mushrooms when they are on sale at my local restaurant supply place and dehydrate them myself...WAY cheaper than paying the outrageous prices for the already dried ones.

    To compare the value of dry to the fresh mushrooms Google the water content of fresh mushrooms and times the weight of the fresh mushrooms you are looking at by the percentage of the mushroom that is not the water then you have the weight equavilant in dry to fresh.

    I totally agree. The only one I don’t like much is dehydrated lions mane. However, it’s almost impossible to find fresh lion’s mane. So there you have it. 🤷‍♀️

    Initial thought: well, that's a little cilckbaity... but I actually agree :D
    You can easily rehydrate them and use in pretty much ANY dish you'd use fresh mushrooms. They have so much more flavor and a much meatier texture. In Poland, where we forage a ton of mushrooms the most common way to store them is drying and they are truly an umami packed staple :D

    But it doesn't beat home grown mushroom (did it years ago and stopped because you can get too much to handle by yourself) dried mushrooms I usually reconstitute frying them with broccoli, onions, cauliflower, bell peppers and some tofu. Sauce is soy sauce and oyster sauce.

      All of this is good! yes, homegrown is pretty awesome because you can harvest when needed... but you also need to be ready to harvest when they are good to go, I do think you get a few more days outa a fresh shrrom than a store bought shroom!!

    I didn’t know people actually buy fresh mushrooms. It’s just logic to me. Where I live, my local asian market shiitake mushroom is 5€/kg, while the dried mushrooms is only 2€/kg, it’s way better. I used to hate mushrooms because of the fresh mushrooms, with their plastic-ish texture. The dry ones are easy to cook, and fast to flavor. The only mushrooms I buy fresh is a small white mushroom, tried dry for them and they’re horrible

    I always buy shiitake that way... but I've never seen other kinds dried. Maybe I didn't really look. Sometimes the taste of shiitake is a bit intense. I love them to death but in some dishes it overwhelms the other ingredients which is why I don't use them for everything.

      It's the best way!!! It's really wild you can find a lot of different shrooms dried online! Shitakes can be very powerful, try to find dried lions mane they are out of this world good!

      That's the down point for me when shopping at Asian supermarkets. Normally, when I buy fruits and veg, I choose organic 95 % of the time. But things like those dried mushrooms usually aren't. They're delicious though. 🥲

    I tried dried shiitake mushrooms one time that I bought from Amazon. It was a popular brand that I won't name. They smelled really bad. I tried to re-hydrate them anyway according to directions. They smelled like gasoline and I threw them out. I never wanted to try dried mushrooms again. I would try again if I knew they would be good.

    its not better but it has its uses. Like Dried Shitake are the best for everything. But there is one dish my mom makes with fresh shittake its fast cooked and I don't how it still just melts in your mouth. She has not been able to get that texture from dried Shittake no matter how much she tried.
    The worst part in my country they are selling dried mushrooms at exhorbitant rate. Its like they are trying to get the same profit margin they get per ounce on fresh mushrooms with the dried mushrooms too.

    If you take the plastic wrapping off of your mushrooms they will last for up to two weeks or longer

    I wonder which has biggest carbon footprint, overall? You are cooking dried mushrooms twice, if you count the drying ... but once you've dried them, you arn't spending energy shipping the water contained in the mushrooms around .... versus fresh has a distribution chain with climate control etc but you only cook them once...

    Doesn't it say on the package of just about every dried mushroom that you should throw out all the liquid you cooked the mushrooms in?

      Absolutely not!! Using dried mushrooms to create broth or stock is a very common thing and it's incredibly good broth! I have never seen this on a mushroom packaging, usually if there is any instructions it would be the opposite!

    I rehydrate my dried mushrooms with my instant pot, not only does it do a great job but you have mushroom stock when you're done and the mushrooms are delicious.

    The "shiitake" mushroom, is our culturally appropriated Chinese "doong gu".
    Yes, our dried doong gu is FAR more aromatic that the fresh ones; which is why we Chinese NEVER use the bland, fresh variety.

    When I get fresh mushrooms I am trying to accumulate and dry the stems in the oven, and i break them up to dry faster. Which has led me to a conclusion:
    we know king oyster mushrooms make for great pulled-pork kind of dishes. But I think buying a tonne of them, breaking them up by hand along the fibres, and drying them with salt would be amaaaazing to cook with. I dry mushrooms on a low heat in the oven and not sure if that makes them even tastier with a bit of browning. If this has been done already i need to find it.

      So dried mushrooms for sure have a LOT more flavor! Its the precooking as you said that really does it.
      I dont think anyone has done that specific technique and it sounds amazing. I should try it!!

    Are they dried like jerky or hard as a rock? I'm thinking you could bring them into a powder for other uses? 🤔

      They are pretty hard... not rock like, but almost like if you dry a sponge 100%... but more dense. You could totally powder them for other uses... ive done it in the past to make umami seasoning

      I use a high speed blender to turn dried shiitake into powder, I use it in my homemade instant ramen soup seasoning. store dry, preferrably mixed in with salt for longer shelf life.

    I forage for mushrooms and usually dry most of them.
    One of my favorite dried flavors for mushrooms are puffballs.

      @@SauceStache I'm in BC. I find them in Autumn in big clusters. Need to get them young when flesh is still solid. When you cut through, it must be solid white. No signs of gills or other structures and not black, otherwise you might be looking at poisonous Amanitas or poisonous earthballs. Actually not difficult to distinguish at all.
      They tend to grow on dieing tree roots. Often city maintained grassy areas around trees. I think they are a fairly universal fungus and can be found in lots of places.
      Good hunting. Plant based...my favorite kind of hunting.

    I bought a package like a year ago because they were cheep, but I think I prepared them wrong. I did a lot of what SS did, but I rehydrated overnight (then barely cooked them) and I used the broth undiluted for pasta water... I did not enjoy the experience and it upset my stomach.
    I think this is a good chance to try them again and just don't go overboard with the broth and actually cook the mushrooms (Frying them).

    Sometimes I'll sauteed mushrooms in a vegan garlic butter with pepper then add to my burgers. The meaty texture adds extra flavor and weight to it!

    The fresh organic Baby Bella mushrooms that I get at Wegmans last at least a week. Baby Bella mushrooms last much longer than white mushrooms, even though they are apparently the same mushroom, but just picked at different ages.

      Baby Bella mushrooms are small Portabella mushrooms and not the same as the white ones.

    Thanks to your videos, I made my first batch of Tofu (fingers). I used soy sauce, sesame oil, olive oil, paprika, garlic powder, onion powder and maple syrup. I let them marinate overnight, coated them in Panko and Air Fried them for 15 min on each side. They were so crunchy. I pressed the tofu and made sure it was dry, but the marinade didn't seem to get soaked in. I guess I should have added some water. But they are good!!! The next one I'm doing is marinating in chicken broth.

      Thats awesome!!!! So with tofu its really hard to get marinade to really soak in, thats why its really important to flavor whatever the coating is going to be the most... like if its a sauce coating, make it a really sticky sauce so you get a nice outside layer, if you are frying it make sure to do like a super flavorful wet batter on the outside before adding a crispy layer over it!! That really helps to boost the marinade flavor!!
