🍕 Neapolitan Style PIZZA at Home with SAGE Pizzaiolo

  • In this video, we're diving into the art of Neapolitan style pizza making using the incredible Sage Pizzaiolo (Breville Pizzaiolo) pizza oven. We will take you through each step of the process, from preparing the perfect dough to adding authentic toppings and achieving that coveted leopard-spotted crust.
    Ingredients for 6 Pizzas:
    • 810 grams (28.5 oz) Caputo Nuvola wheat flour
    • 90 grams (3.2 oz) whole wheat flour
    • 600 milliliters (20.3 fl oz) water for the dough
    • 50 milliliters (1.7 fl oz) water to dissolve the yeast separately
    • 13.5 grams (0.5 oz) fresh yeast
    • 27 grams (1 oz) coarse sea salt
    • Sieved tomatoes
    • Fresh mozzarella
    • Parmesan
    • Extra virgin olive oil
    • Salami Milano
    Instructions:
    1. Prepare the Dough:
    • Sift both types of flour into a large bowl.
    • Combine flours with 600 milliliters of water, mix into a sticky ball, and refrigerate for 1 hour.
    • Dissolve fresh yeast in 50 milliliters of cold water.
    • Add dissolved yeast to dough, knead for 10 minutes, then add sea salt and knead for another 20 minutes.
    2. Rise and Stretch the Dough:
    • Place dough in an oiled bowl, cover, and let sit at room temperature for 30 minutes.
    • Stretch the dough gently after 30 minutes, cover, and let rest for another hour.
    • Repeat stretching process after the first hour, then refrigerate dough for at least 24 hours.
    3. Prep for Baking:
    • Divide dough into four 240g balls and let sit at room temperature for 4 hours.
    • Stretch each dough ball into a thin circle on a semolina-dusted surface.
    4. Add Toppings:
    • Spread tomato sauce on each dough circle, leaving a border.
    • Tear mozzarella and Parmesan and distribute evenly over sauce.
    • Drizzle with olive oil.
    • Evenly distribute Salami Milano
    5. Preheat the Oven:
    • Preheat Sage Pizzaiolo oven to 350°C (662°F) for about 20 minutes.
    6. Bake the Pizza:
    • Carefully slide each topped pizza onto the preheated oven stone floor.
    • Bake for about 2 minutes until crust is puffed and slightly charred.
    7. Final Touches and Serving:
    • Add additional Parmesan Cheese and olive oil if desired.
    • Slice pizzas and enjoy the authentic Neapolitan taste!

      @@user-oe1lm6gw8dNope. 13,5g of fresh yeast for 900g flour???? Also, you are not to add the salt with the other ingredients at the same time. Look how difficult it is for him to shape the dough…etc. Just watch some real italian pizzaiolo’s video and follow that. This ISN’T Neapolitan.

      He used 810g of flour, and salt is added at the very end there, during the final stage of kneading. Maybe it's not the same as Italian pizzaiolos do, but it also comes out airy, crispy and with leopard spottings in the end 🍕🍕🍕
