For those of you who may have gotten confused at the “filling the yams” step a helpful analogy would be to think of it as a makeshift “assembly line”

That steaming pot situation is called a Bain-Marie I believe
That salt can really sneak up on you. I suggest a fifth B, never add salt more than two times no matter what the recipe says

I didn't have the white sweet potatoes, only the blood red ones. I substituted eggs instead but the butterknife made absolute hell out of it. The resulting nightmare made me finish off the vodka, though, so I'd say this is a great recipe!
