Put your stock fish and dry fish in the freezer. It will prevent weevils from getting inside and don't worry it will not be soggy when removed from the freezer.

Just a word of caution, lest you lose your 'ogbono... you need to repackage it into smaller zip lock bags & freeze, or else it crystallizes & lose its taste & 'draw'. Also freeze your garri & egusi to save it from mold. My 2 cents
You are very thorough. You’re not gonna visit any African store in about let’s say three years now. Just go and invest in a huge deep freezer and you are good to go. Good job doing all this work. It’s worth it👍👍👍

What a work out unpacking! Nothing is easy. I love the updates you drop on this new journey that you’re on. Great idea to spread the egusi to dry. My mum helped me dry mine here in Florida, in my garage. I felt she was just wasting time but I was mistaken. The one ziploc that I put in the freezer without her drying it, is the worst now. The ones she dried look so good like freshly ground egusi from the market. Much ❤ Neze. Jisike. I have a family friend in Calgary. I visited her way back in 2016. Hi Neze. Trust me you made a good choice bringing those pots. Our cooking is prolonged heavy duty cooking mostly on high heat. A lot of stirring, coupled with bones in the fishes and meat can scratch the protective layer of non-stick pots. I am still in search of good old Caldero pots. The ones I see are light weight which heats up fast and burns food easily. I don't know if you know this, you can keep your Nigerian food stuffs in the fridge/freezer, The ones my mom brought for me since last year September still intact. God keep blessing your home.
what about stainless steel pots? That's the kind that can withstand our kind of cooking and is very durable. There is a name/number for the most durable kind of stainless cookware, but I have forgotten the name now, unfortunately.

Egusi actually last long and the congealed state is caused by the oily nature of Egusi which gives its long shelf life. Nothing wrong about that. Thank you for sharing
