Hey emmy, it would be more convenient if u done the steaming in a shallower fry pan, lining the pan bottom with a cloth/paper towel, then do your normal dim sum lid, it could save u more time with steaming

This was really cool, I love figuring out how restaurants do stuff like this😊 I imagine if a person was working in an actual Disney kitchen they would have the method down to make these relatively quickly.
Imagine doing a couple hundred a day for service... people criticize the costliness of Disney food, and such, but you can’t say they don’t put in the effort.
I would guess they have some sort of mouse-shaped cookie-cutter doodad to act as a stencil for cutting the white, use a small scoop to remove the white while the cutter is in place, then use some kind of piping bag arrangement to pipe in the yolk. They may even do them in batches in some kind of steam tray? I just googled images of the eggs they serve and they're peeled, so they may steam the eggs in some kind of super non-stick egg-shaped mold instead of the shells (which would certainly cut down on the labor of trimming the shells and peeling them afterwards.
There has to be a more efficient way to do these if they're served at Disneyland... They probably have special tools or maybe you just have to make a hundred at a time to make it worth it, haha

Emmy a tip to remove the rattling noise is to place a folded / small piece of cloth big enough to cover the base of your cermaic bowl etc. That will remove those vibrations

I imagine that if someone wanted to try and make more than just one of these, the best way to make the white part would be to use a half egg shaped mold like they sell for making easter treats in the cake decorating section of most big box stores. disney actually probably has specially made molds with the mickey shape sculpted right in so they don't have to do any tedious carving.
Oh, this gives me such a great idea! Make some plastic forms to sink into the white (use a steamer basket to steam - you were too far from the heat!) The forms would have a round skirt on the top so it would not sink, and a handle for extraction on top! They could be hearts or stars or micky or anything!

I think it'd be easier to boil a bunch of eggs whole. Cut in half, remove yolk & additional holes for ears, and then place raw yolk in the empty space. You could use the cooked yolks you removed for extra filling for deviled eggs, or potato salad, or pasta salad or a salad dressing or something? And the raw whites left over, could be used for omelets or meringue or macaroons or something? That just seems easier if you wanted to much a whole dozen or more.
I bet your boys would be super surprised if you made theses for them! Maybe a small cookie cutter could be used in place of the piping tip couplers and you could do just about any shape! I have so many cookie cutters big and small, my mind is racing with possibilities. If you could get an ostrich egg, you could make a giant Mickey or whatever shape you wanted yolk! I am wondering if a bamboo steamer basket would work on the cooking process. Thanks for sharing this idea. Going to try this before Christmas morning arrives and maybe Santa shaped egg yolks will make an appearance.
