    Ingredients:
    1 kg mutton, cut into pieces
    1/2 cup ghee or cooking oil
    4-5 tomatoes, chopped
    4-5 green chilies, sliced
    1 tablespoon ginger-garlic paste
    1 teaspoon cumin seeds
    1 teaspoon black pepper, crushed
    1 teaspoon red chili flakes
    1 teaspoon coriander powder
    1/2 teaspoon turmeric powder
    Salt to taste
    Fresh coriander leaves, chopped (for garnish)
    Ginger, julienned (for garnish)
    Lemon wedges (for serving)
    Instructions:
    Heat the Ghee/Oil:
    In a large karahi or wok, heat the ghee or oil over medium heat.
    Cook the Mutton:
    Add the ginger-garlic paste and sauté until fragrant.
    Add the mutton pieces and cook on high heat until they are browned on all sides.
    Add Tomatoes and Spices:
    Lower the heat to medium and add the chopped tomatoes. Cook until the tomatoes are soft and the oil starts to separate.
    Add cumin seeds, black pepper, red chili flakes, coriander powder, turmeric powder, and salt. Mix well.
    Simmer the Karahi:
    Cover the karahi and let it simmer on low heat for about 30-40 minutes, or until the mutton is tender and the oil separates from the gravy. Stir occasionally to prevent sticking.
    Add Green Chilies:
    Add the sliced green chilies to the karahi and cook for another 5 minutes.
