Hello Tim, if you are referring to the Yamaga no Sato in the video, this is actually not an issue. It is a Fukamushicha or deep steamed tea and during the steaming process the leaves become bitter and more likely to break. You just use a shorter brewing time because the extraction will be much quicker and then you'll end up with a delicious cup of tea. I'm drinking it right now as I go through the comments, in fact :)
