I think I put the heat on too high even tho it was on btw medium and low cause the ribs overcooked just a lil bit and so did the carameliZe color. It was supposed to be a bit lighter but it was still good to me

Hi Helen, i tried your recipe today and it was amazing thank you. I think the ribs need braising for an hour to make them more tender but nevertheless it was a lovely meal. Thanks
You need to have the courage to let the sugar change to deeper amber color, though it is a very fine line between deep amber color and black of burnt sugar(1-2 seconds may make a difference). Or to play safe, you can use fresh coconut juice instead of water. It also helps give the ribs nicer color. Good luck :)
