I make meatballs kinda big so I can load them with zante currants, toasted pignoli, and chopped green onions. If you've never had meatballs with zante currants, they are tiny raisins, and as you know, when a raisin gets wet, it starts swelling back up into a grape. As the meatballs bake, the tiny currants reconstitute themselves with meat juice, and it is a LOVELY thing. Regular raisins will also work, but you can get many more of the tiny zante currants into each meatball. They're about the size of a match head.
Yes, that surprised me, it should be fried, I make very similar ones to his, but fry them first (don't need a lot of oil, if that is someb. concern), then pour tomato sauce/canned tomatoes, some more origano and basil into to gravy, etc, then let it simmer for half an hour, done.

Veal sucks because of how it's produced. You can add a little Knox unflavored gelatin to your meatballs and get the same texture without cruel and expensive veal. You can also make very convincing veal cutlets out of thinly-sliced pork loin. This is covered in Henry Hill's cookbook under "Fugazy Cutlets".
