There's a line on Alderaan where the Sith is musing over who he should kill next, Jedi line is something like "you're a sick man" and the Sith replies "I enjoy life's simple pleasures. Don't judge me. "
Another option was 'Point the laser at yourself and put us out of your misery.'. That was my favourite option.

I think one of the funniest moments for a Jedi Knight or Consular is on Tython when you have the option of welcoming the force sensitive Flesh Raider with the little boy. But, instead, you force push him into the flames.

He does do one voice in this game where he goes full Snake, he even delivers a line about "not all of us can shoot lightning from our fingertips", it's great.

The biggest crime SWTOR committed was the lack of sarcastic and/or annoyed replies about how often people claim to be "trained to kill Jedi".

that's basically how it goes, the opposite side of the force is generally more interesting than your faction's side.
Jedi Knight: light side - jedi code to the letter
Dark side - more independent, questions the code
Sith warrior: Dark side - a fair amount of condensed bastard.
Light side - honorable warrior
it's one of the things I like about this game.

Nah, light side has better companions, save Vette, the only good one on the darkside, and lana who is basically a grey jedi at this point
