I feel the beef/fish combo. I do hot sausage w sardines and onions over grits. Fry the hot sausage first and then sauté the onions. Toss in some sardines and stir slowly so the sardines don’t totally fall apart. Try it.

When I lived in Philly I would get breakfast from there once a week. Their pork roll and cheese on a Kaiser roll with potatoes is amazing! Arguably better than any pork roll sandwich I’ve had in Jersey.
I just tried Johny's Hot Sausage and to be honest it was just ok imho... If you're talking bout a great HOT SAUSAGE sandwich the GOAT used to be MIKE"S SAUSAGE TRUCK on 24th Passyunk Ave in South Philly with the classic Dietz & Watson on a fresh Di Bruno's roll... Unfortunately, Mike the owner who was the nicest, humblest dude passed away a couple years back due to health reasons after 25+ years... Will sadly be missed by me and MANY others who ever had one of his HOT SAUSAGES!!!
My second fav, however, is still around and also has been a staple at 5th & South Street for 20+ years and my current go-to for a great hot sausage GUS's SAUSAGE CART!!! Another great guy to boot !!!

Next time you visit, spend a minute with owner John, who is a great guy and who makes old school Pepper Hash which is the PERFECT topping for his hot dogs and especially the hot dog-fish cake combo, which used to be a staple at hot dog joints all over Philly. John gets his rolls custom made for him, BTW. Most famous version of the Philly Surf N Turf used to be served at Old Original Levis (LEH-viss), a famous hot dog joint on 6th St between Lombard and South. Hot dog-fish cake was LEGEND there! You discovered maybe the only place still serving hot dog-fish cake everyday anywhere in Philly.
