    Hello! Today, I want to share with you the recipe for Belen Tava, one of the delightful flavors of Hatay, known for its tender, melt-in-your-mouth meat. With this recipe, you can delight both yourself and your loved ones. Let's get started!
    Ingredients
    - 500 grams of diced beef (you can use lamb if you prefer)
    - 1 medium-sized onion (chopped)
    - 2-3 cloves of garlic (finely chopped)
    - 1 red bell pepper (chopped)
    - 2 green peppers (chopped)
    - 3 medium-sized tomatoes (peeled and diced)
    - 1 teaspoon salt
    - 1 teaspoon red pepper flakes
    - 1 teaspoon thyme
    - Half a teaspoon black pepper
    - 1 cup hot water
    - 1 tablespoon tomato paste
    - 100 grams butter (diced)
    Instructions
    1. Place 500 grams of diced beef in a clay pot. (You can use lamb for a more flavorful dish.)
    2. Chop 1 medium-sized onion and add it to the beef.
    3. Finely chop 2-3 cloves of garlic and add them.
    4. Chop 1 red bell pepper and add it to the mix.
    5. Similarly, chop 2 green peppers and add them.
    6. Peel and dice 3 medium-sized tomatoes and add them to the pot.
    7. Add 1 teaspoon salt, 1 teaspoon red pepper flakes, 1 teaspoon thyme, and half a teaspoon black pepper.
    8. Mix all the ingredients well with your hands and level the surface.
    9. For the sauce, mix 1 tablespoon of tomato paste into 1 cup of hot water until dissolved. Pour the sauce over the dish.
    10. Distribute 100 grams of diced butter over the dish. (If your meat is fatty, you may not need the butter.)
    11. Moisten a piece of parchment paper, crumple it in your hand, and place it over the dish.
    12. Place the dish in a preheated oven at 200 degrees Celsius, on a rack below the middle, and let it cook.
    13. Occasionally remove the paper and stir the dish once or twice. I stirred it once.
    14. Cook for a total of 1 hour and 20 minutes, then remove the dish from the oven.
    15. Serve hot, optionally with rice.
    Tips
    - Marinating your meat overnight will enhance the flavor.
    - Using lamb will result in a softer and more flavorful dish.
    - Be careful not to add too much water; cooking with the vegetables' own juices will enhance the taste.
    - Stirring occasionally during cooking ensures even cooking of all ingredients.
