when i make something new i find enough recipes to determine the ingredients and processes that are the base characteristics of the dish. then i carry out those basic principals adding my own touch through the fringe ingredients that can be included or excluded. if i want water chestnuts in my chili con carne, i put them in.
+Bigtime Benjamin So true what you said! I'm pretty much a self-taught cook, and as I've gained more confidence in my cooking and baking, I play around with recipes. Pretty much every recipe I've referred to, I've made alterations to. I think that's the key to using cookbooks. They serve as guidebooks. You can of course follow them word for word, depending on how well written they are, but when things don't turn out, then it's time to tweak things, and that's when you really learn and have fun :0)
Easy to say see what you have, then cook. People can't afford to just have a load of stuff and cook whatever, if you only buy what you need you save money?
