- Hey Foodies, today we are going to make upma from rice with a tangy spicy peanut chutney. This is a easy recipe as it requires very less preparation and ingredients, perfect during the lockdown period.

Ingredients for Rice Upma and Peanut Chutney:
For Upma
Rice - 1 cup
Ghee - 2 tbsp
Mustard - 1 tsp
Curry leaves - 1 sprig
Onion - 1 chopped
Carrot - 1 chopped
Beans - 2-3 chopped
Frozen peas - 2-3 tbsp
Salt - as per taste
Turmeric powder - 1/2 tsp
Red chilli powder - 1/2 tsp
Water - 2 1/2 cups
Lemon - 1/2
For Chutney
Oil - 1 tbsp
Peanuts - 1/2 cup
Asafoetida - a pinch
Red chilli - 4
Tomato - 1 large
Salt - a per taste
Water - to grind

Hi yaman.. looks good..i would like to share this with you. We make this at home frequently. But the variation is we ( i think most south tamilians do it this way) always soak the rice (raw rice) after washing for about 45min. The water is then drained by keeping aside in a colander for 10 min and then spread on a cloth for drying. It shud not be completely dry but about 85 percent dry. Note that it is not kept under the fan. ( Just kept indoors for drying ) and then ground it to a consistency which is a little bigger than sooji.. We also sieve it to separate the fine powdee and the granules and store them separately. We make it in large batches and store in the freezer since it will have a small amt of moisture in it. Then for making upma we take the req rice granules add a very small qty of the finer powder for binding ( it is totally up to you ). And the rest of the procedure is as you have mentioned. For tadka we add mustard seeds, green chillies, ginger paste, curry leaves, hing and once the water comes to a boil we add salt grated coconut- let it cook for 2 min and then add the rice. This way the upma is not of a pasty texture. The variation in tadka chamges the taste like instead of green chillies we add red ones, sometimes a handful of soaked and coarsely ground dal and so on. If we eat it as upma it is called rice upma...otherwise for another preparation named kozhakattai we remove from stove a 2 minutes earlier ( so that it is not completely dry) and when the hot mix comes to a warm temperature these are made into balls- oval or round and steamed like momos in an idly steamer for 10min or till the surface acquires a shine. This dish is called upma kozhakattai in tamil..
Once the rice granules are ready and stored, it is very handy and easy to prepare the above dishes.
We also prepare the same with boiled rice ( the one which we use for dosa) where the rice is soaked for 4 to 5 hours, is ground with coconut and measured qty of water. This is then added to the tadka immediately. Rest of the procedure is the same. Boiled rice takes a little more water and more time to cook..We dont store the ones from boiled rice..the kozhakkattais from boiled rice are much softer and melts in the mouth. :)

Rice uppma is a classic Tambrahms recipe. It is fasting recipe and a good travel food too. But you have given it a totally a different twist nad made it like a regular rava uppma. Great going

Yes . Rinse rice , drain and dry it on a towel until rice
