    In this video I share my recipe for almond cheese. Here's a simple, yet delicious recipe for almond cheese. Once you master this, the sky's the limit! There are so many wonderful ways you can incorporate herbs, spices and other nuts, seeds and even coconut into this basic recipe. Different nuts and seeds produce different flavors and textures. Pressing or dehydrating can also produce different textures. Remember, this is a living food and good for you, but it is rich, so be careful of the fat content.

    It would have been nice to see what the finished product actually looked like by you slicing into it and showing us the consistency, Etc.

    Recipe:
    2 cups almonds, soaked and sprouted
    1/2 tsp probiotic powder
    1 cup purified water
    (per website)

    great video chef tina! i know you were serving your brazil nut cheese ball later that day however it would have been really nice to see the texture of it when it was cut into. next time make an extra one or have one that was already prepared and aged so you can show us. thanks! totally rawsome! :D

    @leronk Hi Leronk, The almonds have been sprouted prier to their blanching which helps them to release their enzyme inhibitor. The blanching does destroy some of the enzymes, however not all of them. If you are trying to maintain a 100% raw diet, try using different nuts or seeds to create your cheese (those without skins).     about the probiotic.....where do i get that? do i break open an acidophilus capsule? can i use a fermented food like miso? this is the most confusing part of this recipe.

    I do like the recipe and I have just soaked my almonds! I do not have a high power blender so I will be grinding the nuts in my coffee grinder, then putting them in the blender. I notice Chef Tina doesn't answer any questions, which is a shame, and doesn't encourage people to come back! Oh and I am going to add some yeast flakes in blender for extra cheesy flavour!

    @clairepatt1 I add seasoning after the cheese has fermented. This way, you know exactly what flavors you're working with because not all cheese has the same fermentation taste;) Enjoy! Tina Jo

    I was told if the skin comes off after soaking the Almonds weren't truly raw in the first place. Now a days you need a special hook up for truly raw almonds FDA found raw Almonds to be too healthy so made it illegal to sell raw almonds you have to go direct to the farmer and I think he's limited to 5 pounds at a time.

      Heidi Minett seems she doesn't reply much which is not practical especially when it's a tutorial. I saw another person comment that from the website it's 1/2 tsp of probiotic powder

    Almonds and cashews are too expensive here but I have an abundance of free walnuts. If I make walnut cheese how does it taste?

    @cappykay The almonds are soaked first over night to start the sprouting process and to wash out the enzyme inhibitor that nuts/seeds have in them. The reason she blanched them in the hot water was to remove the skins and only to remove the skins. You do not have to do that after you soak/sprout your nuts usually but to keep the nut cheese looking like and feeling like traditional cheese is why roving the skin was done here. Probiotics is the culture used to start the fermentation.

    What probiotic are you using? It's nice to see some cheese made with almonds instead of cashews. My son is deathly allergic to cashews, pistachios, and Brazil nuts so it makes going vegan or raw unfeasible for us. Not to mention I'm deathly allergic to walnuts. bad huh? But I like to avoid meat as much as possible so this is really nice.

    Soaking almonds in colder water works as well, just takes a bit longer.

    Is plain almond cheese good to make a vegan cheesecake (as a cashew alternative)?

    Actually, you can peel the skin off of almonds by covering with boiiing water and when the water is cool
    enough to touch, the skin comes right off, just pinch between your thumb and forefinger

    hi, thanks for the video. i have a couple of questions:
    how much probiotic and what probiotic do you recommend ??
    do you keep this recipe of almond cheese in a petri dish in the fridge or can you roll it into a ball and cover with either some small nuts or the left over pulp from homemade almond milk that i have left over from the other day ?

    awesome! im half italian and grew up with a lot of that kinda cooking too. i am 2 years or more into being vegetarian/pescatarian diet and had a 2-month vegan stint and then just recently started my raw vegan journey and more than ever i am hurtin for some tasty italian food. we went to an agricultural fair yesterday and them sausage sandwiches (death sandwiches lol) unfortunately looked more mouth watering than ever before in my life lol D; its terrible. some raw vegan cheese may be necessary

    You kind of ran through the probiotics very quickly. What kind and how much to use? It looks like you put a lot in there. Aren't probiotics expensive?

    You should never place anything into your running Vitamix blender like a spatula! Use the tamper tool they give you.

    I tried this but the cheese cloth ended up smelling like diahrea and the cheese doesnt smell as bad but still not great. Im wondering if a strong smell is normal or not

      Get an education honey. Pro-biotics are good bacteria that make our bodys alkaline, think of it this way, they are the good guys out of bacteria, we use
      anti-biotics to kill infection, antibiotics are mostly harmful.

    How is this economical or remotely cheesy? $13 for probiotics, $6 for almonds. It never resembled cheese (except maybe cream cheese). It was bland [virtually tasteless] and crumbly- like a veggie burger fail. If you try this, ADD SALT. Other seasonings might help and should have been mentioned at the start, not as an afterthought at the end, and more like 48 hours to cure, not 12.

    You made a fermented "almond spread"... how is this "cheese!?" Why try to pretend you are eating something that you're not? All your life you got into the "habit" of eating something that is not good for you. Why try to hold on to that habit?
    You didn't even have one to cut open so we could see what it is like inside. After watching the whole video, that was very disappointing:(
    So, the first person that tries to cut it, it rolls off the plate and onto the floor. lol

    I've never tried that Oya, but it sure makes senses. It works with other fermented foods like kimchi and sauerkraut. I'd give it a try! Let me know how it goes!
