    Just love Kharisa Mas . How do I ferment bamboo. I can get fresh bamboo here.

      There is a video of how to ferment bamboo in my channel. All you have to do is chop bamboo shoots into tiny bits and seal them to ferment in an air-tight jar.

    Oh my goodness that looks absolutely delicious!! There's something about the texture and taste of a bamboo shoots, and once you have it, i guarantee you will always want to have it more. I have never seen a bamboo shoots down here in Santa Catarina Brazil. When i was in England they do have them fresh and also in pickle!!.....And you know what Nambi, my mother and my sister, they are going to Shillong next month lucky people hahahaha....my mother own a good sized school in Upper shillong "The SpringTime School".

      The smell, the texture and the taste of bamboo shoots always reminds me of home. Whenever I go down south to Chennai, I make sure I carry a huge jar of fermented bamboo shoots with me :) Oh wow .. I had been wanting to open a small school in my village.. I don't see it happening in the near future though, it's going to take some time. If time permits maybe I will go visit the school to get some tips on how to run and administer a school :D couple of my close friends have studied in Army school in Upper Shillong.

      I love it too, its been there in the house for a very long time. I have seen such spatulas in weekly markets in rural Assam. You will definitely get it there. As for online I am not aware of any store selling it. If I come across I will let you know.

      It was yummy, apparently the authentic authentic version doesn't make use of ginger and garlic paste, they instead use mixture of fenugreek seeds, mustard, Jeera and other spices.

    My roommate cooked Daal with Bamboo Shoot yesterday :-D It tasted awesome though.
    I've been wanting to eat fish, why do you do this Nambie? 😧
    'Korisa maas' sounds like some Japanese words or something 😂

      hmmm .. daal with bamboo shoot .. sounds interesting. I am gonna try that for dinner tonight. Fish is delicious meat. I love it but after pork :D

      Btw, did you try the daal+bamboo shoot? 😂
      You're supposed to boil the daal along with some tumeric, bamboo shoot, and garlic.
      Then when it's almost done, keep it aside.
      Fry some onions and tomatoes, add a pinch of turmeric+chilly powder.
      Mashup the tomatoes & add the daal, cook for another 5mins or so.
      THEN, just before you put it off the flame, ADD IN A GOOD AMOUNT OF SMILE 😇 It makes the dish taste even better.
      & that Japanese word, you got that right 😂😂

    We don’t get bamboo shoots like we do in Assam. They come in bottles but the tangy taste is not there. Any advice?

      It was delicious :D I finished it all by myself :) in the original version of this dish, ginger & garlic paste is not used. instead fenugreek, jeera and mustard seeds are used.

    How can I get fermented Bamboo. I live in the States. Here I can buy canned bamboo. Any advice?

      Thank you for your suggestion, I agree with you but since I am shooting outdoors in a rural area with limited electricity supply I cant do much. Perhaps when i start shooting indoors in an urban area I will definitely keep your suggestion in mind :)

    Hi it looks good, but it's like your version of kharisa maas, if you are saying it is Assamese style kharisa Maas then, in that recipe ginger and garlic paste will not go with kharisa. I really liked your recipes but you should research more on Assamese cuisine.

      Hey thanks for taking time to explain that to me. I got the feedback from one another person on my facebook page. It's not my version, I feature home recipes that I get from my friends and viewers. I got this from an Assamese friend of mine. I will in the near future try making a video on the authentic one too :)

      We actually add fresh ginger and garlic paste whether purely boil or with some oil like you..... mine you I am from Assam too....... so when someone says its not authentic assamese cuisine then they themselves need to do a little research in their own state. you're doing good. keep it up....

      Caroline Kropi Teaching something wrong doesnt make a point to argue. Authentic term is not the pleasing taste as of today, where we can put anything of our choice and term it authentic. It is happening in Assam and NorthEast only because we never had our recipes written in the past. I like Eat Ur Kappa's efforts in preserving NE food culture and I find the owner a natural presenter. Assamese Cuisine comprises of the same dish cooked in various styles by all the indegenous tribes of Assam. Although I have never come across adding "GINGER GARLIC" in any tribal "SOUR" Fish dishes, this must be an new addition to authenticity. I have tasted Karbi delices where most of the dises are boiled and very healthy, even if it is fish. Half Fried fish is a main stream Assamese non tribal procedure of cooking fish, where garli+ginger is kind of a forbidden spice. For sour dishes, either panch phoran is tampered or a little of onion (local one) or sometime few methi seeds. No doubt if fish is made with mustard seeds ginger+garlic is the main ingredient among the spices, that to a minimal amount.

      Hi Ms Kropi, I am not in fighting here, I have a good knowledge about my own cuisine plus I have a professional degree in this field. You can put ginger garlic in any dishes you want but in our Authentic Assamese cuisine we don't put ginger garlic paste in Kharisa Maas. When you use "authentic " then no ginger garlic in fish curry in Assam. Nowadays we use ginger garlic paste in fish curries due to our taste buds. BTW I really like Nambi's recipe

      then cut out tribals from your authentic Assam..... especially the karbis..... cuz our main spices are ginger and garlic..... whether it is boil fish or chicken or pork or beef or mutton, or cooking using oil or patot diya mas, or sunga mas or mangxo ginger and garlic is a must..... there is a saying in Karbi 'harsun kelok pen hanso jokset kalangdang' harsun kelok mean nohoru, hanso means ginger. you cannot accused me of trying to fight right. I am not fighting. I know my own cuisine. I don't need to get a degree on my own food like you. I grew up eating them. Coming from a hill district and growing up in a farm I know which grass is eatable and which is poisonous.
      Btw I am mixture of Ahom and Karbi. And I haven't tasted a fish curry without ginger and garlic unless its fish chutney or pura or patot diya where we use universal globe basil or lopong in karbi and garnishing with roasted black sesame powder.
      Mine you I am not fighting with you but you should have learn the cuisine of the different tribes living in Assam before you comment since you called your self a CHEF.
