Herb Yogurt Dip, Sauce, Whatever You Want It to Be! | Easy Dill Dressing

- Raise your hand if you have trouble finishing up a bundle of herbs (🙋🏻♀️). This herb yogurt dip is an easy, delicious way to ensure that never happens again! Use it as a dip, as seen here with crudités, or a salad dressing, or sauce to enjoy with your favorite grilled meats. Today's herb yogurt dip comprises mostly dill with a handful of scallions in a garlic-inflected Greek yogurt sauce that also contains a bit of sour cream. Think of it as a tangy cousin to another favorite, green goddess dressing. I like to keep a jar of this in the fridge for easy weekday salad lunches.

Herb Yogurt Dip (with Dill and Scallions)
2 heaping cups of tender herbs of choice (dill today, but you can use a mix parsley, cilantro, mint, etc.), roughly chopped
3 to 4 scallions, roughly chopped
Zest and juice of 1 lemon
1 cup Greek yogurt
2 to 3 tablespoons sour cream
1 to 2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt, more to taste
Freshly cracked black pepper
Combine all ingredients in a high-powered blender or food processor. Season to taste. Serve with cold vegetable crudités, salad greens, or your favorite grilled meats.
Stores well in the fridge for about 3 to 5 days.
