I did all my animations manually in After Effects, though I believe it should be possible in any video editor. Basically take a PDF export of the score from your notation program, set completely wide so it is unbroken, and then animate it left to right (using keyframes) with the added music track. I then invert the PDF so it shows up as white, and just select random backgrounds and change the colors around etc. I also found that videos work best at 4K 60fps, to get as sharp a score as possible and so they scroll smoothly, but fair warning even on a fast computer like mine it takes awhile to render! I get asked about this a lot so probably in a couple weeks I'm going to do a tutorial showing my workflow for score videos, stay tuned!
