    Sun + soil - chablis is the perfect expression of white wine! I do enjoy champagne too, but few other chardonnay

    I am curious about the minerality when we talk about Chablis :) what is minerality?

      Some say it's the rocky smell, limestone, graphite etc ...

      Imagine the scent of a still summer rain hitting a bare cliff. Sounds very specific I know, but it gives a very distinct smell. You can also find it a lot in for instance german Riesling Trocken and Sancerre, only to name a few. A common misconception is that it is the actual minerals going into the grapes and therefore the wine, causing the mineral flavour, which is not the case (long story short).
