    I used to can peaches with my grandmother when I was a teenager. I’m in my 50’s now, and this was the perfect refresher. I’ll be canning peaches this week. Thank you!

    I've done pickles, pears, peaches, jams,jellies, corn, beans and plan to can some apples!!! I love canning and love to share with family and friends. It's such a good feeling when you see all the jars after the process is complete!!!! Your peaches look amazing!🤗

    Looks great. We use 1.5 TBSP of honey per pint of peaches instead of sugar. It tates amazing. I use local raw unpasteurized honey. And I was taught to boil it for 20 min then take it out and turn it upsidedown.

    I just found your channel! I have done my research and I choose to use the Mennonite & Amish way of preserving food! So thank you for sharing the skills you have learned. As you stated, the Mennonite and Amish communities have been preserving food SAFELY for decades. No fancy equipment just preserving the nutrients, taste and appearance the best way, that way being the process that has been handed down through the generations. I can't wait to check out your other videos. Thanks!

    I love all the old fashioned methods of canning. I learned to can tomatos, whole, chopped, puree, etc. from my Italian father in law who was born and raised on a farm in Italy. He came to America during the war and his first job was a cook in Little Italy before he enlisted in the army. When my husband and I bought our first house just before the birth of our son he came to stay to help my husband with all the projects but one of them was setting up a garden with me and what a garden we had. I learned the old way of preserving and never had a problem. It was years later that a friend came over while I was canning puree and what an earful I got about poisoning my family. Keep in mind my husbands aunts, uncles, cousins, friends all used the old way. Since then I have made changes and I do follow current guidelines for meats and soup, etc., but for fruits, tomato products, veggies, I use the traditional methods. Things never get that mushy, over processed taste or consistency. You keep doing what works for you.

    I’ve been watching for a while the older videos, I’m learning you don’t always have to follow and alphabet organization to can safe, I also appreciate your calm, in this world today it seems so important to me not ho always hear how bad things are, how we must do this or that. Obviously if a person is looking for videos to preserve something they already know that! Thank you

    That pitter is something I have never seen before look so handy. I did pumpkin puree canned in jars instead of freezing it and I would do it all over again. That way it's not so watery when you make your pies. It's nice and thick like store bought

    When canning peaches i always put my peaches in boiling water for 1 min then the skin slides right off. No time consuming peeling and the peaches are smooth and look better in jars. Thank you for your great video

    The peaches look delicious! I've used stevia the last couple years to, but plant stevia in the garden and throw in 3 leaves per quart. Our children love it! ---Liz

    I froze my peaches and corn but canned salsa, spaghetti sauce, diced tomatoes, green beans, 2 kinds of sliced pickles, pickle relish and chicken broth. I also can a mixture of chicken, celery, carrots,onion and potatoes to use when I make Amish dressing. I still have vegetable soup and tomato juice left from last year

    I have canned peaches for many years but I have never seen or heard of using a peeler to peel the peaches. That's amazing. I was taught to blanch them a bit and the skin comes right off... Makes it an easy job for children to help with.
    I have canned 2 kinds of BBQ sauce, salsa,, veggie soup, chilli soup, pear sauce, peaches, rasp pie filling, blueberry pie filling, sandwich pickles, stuffed hot peppers, ketchup, broccoli ( for soups) and froze a lot of veggies... I'm almost finished with canning for this year! It is fun to fill up my fruit cellar but oh so nice to have it finished up for the season!

    I wish I looked as calm and put together when I was canning as you do! I always look like a frazzled mess when I'm in the midst of such projects! I'm waiting on homemade tomato sauce to simmer down to bottle in an hour or two.

    I have canned baby gold peaches too & I also water bath th for 5 min after the water comes to a boil. A tip I will share with you that we do is we use the apple cutter(wedger or whatever u call it)😊 to cut up the peach slices. The children love doing that part. Sometimes they fill a jar with just the round middle pieces. Those are the 'special' jars😅

    My peaches pears and apples I always can with no sugar or any sugar substitute.
    I even found a sugerless recipe for canning cucumbers.
    It's fun to see how others can their food. Keep it up 😉

    I will try this method after returning home to Florida. We’re visiting my Father in Québec Canada for 3 months, and it’s getting cold here, so canning upon my return home will be a relaxing activity on my list.

    I also canned peaches, altho not nearly as many!, diced tomatoes, marinara sauce, and currently I'm drying basil. It smells so good! I also still have some green beans that are blooming so I'm hoping they produce well enough to can or freeze some.

    I have bought my jars, lids, etc. and I have ordered to pressurized canning pot that also does the cold water canning. So I am looking forward to canning this fall!

    Peaches is the fruit we love the most in our family so I canned a lot too. I canned around 80 quarts and we're a family of 8 people.

    Oh I’m definitely doing this next year! Thanks for the stevia brand too as my husband detects the after taste before he even swallows lol.
    Too late for this peach season, but hubs and I throughly enjoyed a bushel or two from our local Mennonite friends this August.

    I love peaches! 😋 I know this will NOT assist you in any way, but I tell you what, if you make peach pie, substitute the nutmeg with ginger (I think it's half of the amount, you can do all the amount if your family likes ginger.) YUMMY!
    I like to use stevia in my coffees and teas.

    I haven’t canned before, but am thinking about doing it next summer. I use Stevia in the Raw everyday for my coffee. They come in packets. Like you said, no after taste! Fascinating hearing how to can. Thank you!

    Great video on canning. This year I am trying something different others have been doing. I am using white grape juice to replace the sugar syrup on peaches. I am doing just half of a case so i'll see how they turn out.
    I also ran into a bad ball lid this year. I am now inspecting the lids for a low spot on the rubber that seals the lid. This caused a bad seal on my dilly beans. The neighbor that I split the case of peaches had a bad Kerr lid from Walmart. This one was bent and you could see the damage. I am working on Emails to the manufacturers. Just keep an eye out for bad lids. I think the demand for lids has made the manufacturers do less machine maintenance to get out more lids.

    Interesting. I stopped peeling peaches because if you don't like to eat peels they just slip off once canned. I can't stand stevia, tried various forms, not that one yet. However I never put that much sugar in anything! Usually cut all sugar in half in every recipe, or even less.
    Canning tomatoes, crushed, sauce, ketchup.... did some peaches. May do some apples if I get free ones😊
    Have to check if I get chicken, that will definitely be canned!!!!
    Side note peaches taste amazing with raspberries!

      that's interesting. never heard of canning with the peels on! That works! Yes, I'm with you. People put so much sugar in everything. I remember thinking 4 cups is terribly much sugar for 1 gallon of water (which is 16 cups). But when you look up recipes, a 'light syrup' is considered half and half ratio, 2 cups sugar to 4 cups water! So for a gallon that would be 8 cups of sugar! That just blows my mind, LOL. I don't want to think of the amount that goes into a 'heavy' syrup!

      as for not peeling I just was in a time crunch one year - I never can a whole lot - so I decided to forego the peeling and wouldn't ya know: the peels come off like nothing once you open a jar, though I usually eat the skins then because they are soft.

    Yummy. One jar a week for over a year. Cobblers, peaches for dinner, peaches for breakfast. Did you make peach jam too? I've never canned peaches but I used to freeze a lot when we had peach trees. Did a lot of peach jam making. I am motivated for next summer.

    This year I did peaches with just a pinch of cayenne pepper per quart jar (no sweetener) they were amazingly delicious. I also used baby gold peaches. I've also done greenbeans, broth, stewed tomatoes, grape juice and I've been fermenting pickles.

      @@jakegracelapp6925 It doesn't sweeten it but somehow it really helps enhance the peach flavor. I don't know how it works but we like it. I didn't do all of my peaches this way. I hadn't done it before so I just did a few to try and we really liked it.

    Do you have a video for pears and pickles etc? A close friend of mine told me to can for 4 minutes also to prevent the fruit going mushy................. Last year I used organic apple juice............

    I didn't can anything yet this year. I did can peaches last year though. Since it's just me, I hardly ate any. I'm not much of a sweets person. I am getting ready to can a bunch of meat though. Chicken, turkey, and turkey bacon sausage.

    Does the stevia have an aftertaste after your canning process? I’ve heard the heating process changes the flavor.

    Wow, thank you! I'm going to try this. I bought cling peaches but didn't know there's a different way to can them. I'm new at canning. I dropped them in hot water, then ice water but they didn't peel, it was a disaster. I have leftover brine from making pickles just sitting on my table in jars, can I still save it?

      If they're not very ripe, youd want to blanch a little longer.. maybe 2 mins

      @@theMennoniteMom ohhhhhh man it will change your life and greatly add to how fast you get your canning done. Heating 3-4 inches of water vs gallons is such a blessing ...and the weight of the canner with water is wonderful too. Hope you get to try or buy one. Sending love

    I like peaches too, when it's the season to eat peaches, I always buy a lot, and my boyfriends always feel so surprised by my fast speed to let them disappeared.

    After leaving a half inch space, for the first time after years if canning peaches the syrup lowered in jar after processing. Why? Will they still be good as they did seal.

    So, when you tasted the bottled peaches with the stevia did you like them as much as heavy syrup?
    We have never bottled anything before and am VERY INTERESTED!!

      I don't prefer super sweet peaches. So I don't like the ones that have heavy syrup. But I think they taste great!

    Thanks for this tutorial. I have never canned anything before but have seriously considered wanting to start. I just have no idea where I would store any of the finished product at the moment. Do you store everything in a cool, dark place separate from the house that changes with season as you use ac/furnance?

      You could store in the pantry... but yes, it is good to have a basement which is where we store our jars...
