Since you have lots of time to explore... the “Capilla del Hombre” has some very moving art and illustrates the nearly constant social instability in South America. Makes you really appreciate the stability in Ecuador... though it makes you wonder how long it will last.
We tried to make it there a couple weeks ago but the timing wasn't right. The only guesthouse there is closed right now. It's definitely up there on my list.

I suggest the Quilotoa climb, it's a little tough but has a nice view.
We did a three day hike from Quilotoa. It was incredible.
You should check out the Pululahua Geobotanical Reserve
