      +Kerem KORUR -- Actually, a yanagi IS special. Unlike western knives, most Japanese knives are asymmetrical, being flat on one side and beveled on the other. Although one can make do with a western slicing knife (or even a chef's knife), a yanagi will make certain tasks easier.

    tried this a number of times - he makes it look easier than it is. Maybe what I'm using for "knife rails" aren't don't work as well or his knife is really good.

    You need a finely polished edge to reduce the zigzag motion, I sharpen my knife on a 1000 stone and it only becomes polished enough after peeling 3kilos of cucumber.

    Love this method and presentation, however, it seems you'll need to find pretty 'straight' (not curved) cucumbers. I suppose the long Asian cucumbers might be preferable? Those can also be curved, but perhaps more flexible such that, with enough pressure, u can straighten them out when cutting.

      It is easier with straight one. But you can use curved one too. You need little more skill.
