Matembele// sweet potato leaves //Congolese food 🇨🇩

- in this video, I show how I cook matembele or sweet potato leaves the easiest yet delicious method. thank you for watching 🧡
Ingredients:
2 small onion finely diced
1 medium leek finely diced
1 green bell pepper finely diced
2 tablespoons palm oil
2 bay leaves
3 minced garlic cloves
1 kg matembele ( 2 packs of 500g)
2 canned mackerel in oil
About 1/4 teaspoon nutmeg
1vegetable stock ( I used Knorr)
Salt and black pepper to taste.
Methods:
If using frozen matembele, defrost completely overnight. Once defrosted, place it in a sieve and wash with cold water than drain. ( This stage is optional but a personal preference)
To cook,
👩🏾🍳 Heat the palm oil in a big enough pan over medium heat.
👩🏾🍳 Add the the diced onion, leek and bel pepper and fry for 3 minutes. Add in the bay leaves and minced garlic and continue frying for 30 second.
👩🏾🍳 Now add in the matembele and fry for 8 to 10 minutes ( highly recommend this step) turning occasionally.
👩🏾🍳 Add in the canned fish. Season with nutmeg, stock, salt and pepper, add about 1 1/2 cups hot water. Mix well, cover, reduce heat to low and simmer for 30 minutes.
👩🏾🍳 Serve and enjoy.
