This is a really great effort since there are a lot of vegetarians in surat I do think the recipe will greatly benefit from some research and experimentation since a lot of the steps seemed to have no purpose (using blowtorch on the sauce, the paneer could've used more marination and time on the roast of you are going to put it on a spit) Of course I am commenting without tasting it and it might good the way it is now
All good recommendations but you forgot to mention the sauce. If he wants us to taste his paneer, why put a mountain of sauces on it? Or it is just the sauce that people come to eat?

Lalaji saw a shawarma making video on TH-cam and did the same on paneer.....if had to apply same sauce on paneer and same in the roll.....better to bring cooked paneer from home like the uncle chips (his secret ingredient)
