    Today I'm sharing a slowed down day in my life. Like many of you, I've been pretty much glued to the news nonstop and struggling to mindfully find a moment to allow my mind to slow down. Today I'm sharing a slow-ish day in my life (I don't really live that slowly, tbh), and doing some things at my own pace to recharge my battery.       I'm not vegetarian but have also been trying to incorporate more plant-based meals & found that Pickup Limes on YT has some really great recipe ideas (they're vegan but sometimes I use regular milk instead, etc.).

      I got a healthy banana split idea from Madeline Olivia's channel. It's a banana sliced down the middle, top with coconut yogurt (but I used almond yogurt instead), raspberries (but I add other fruit), chocolate chips, almond butter and toasted coconut chips, I drizzle on a little maple 🍁 syrup.

      Hey Christina! Highly recommend the Roasting Tin receipt book series (specifically the Green Roasting Tin) by Rukmini Iyer. I can’t cook to save my life, have never been into recipe books by these are amazing. Literally through everything into a roasting pan and boom! You have an entire fancy meal!

    2 great and easy recipes are oven roasted tomatoes, garlic, bell peppers and onions then blend them together to make a sauce and add to pasta. Another is lentils, veggie broth, garlic, peppers, onions, carrots, potatoes with some rice or barley on the side. You can have a side of spinach with both.

    I feel like tomato as comfort food is a very Eastern European thing. I have such fond memories of visiting family in Warsaw and having a spread of meats and cheeses for breakfast, alongside a huge plate of fresh tomatoes, sliced and sprinkled with chives.

    Making a chickpea salad instead of chicken salad is a really easy swap and if you use a plant based mayo you can make it entirely vegan. Also, there’s no cooking involved if you use canned chickpeas.

    Bowls are a great way to get some plant based meals in your day. Brown rice or quinoa with lentils, beans and kale and whatever other veggies! Or stir fry with tofu!

    Best thing I ever got was a slow cooker, stick everything in switch on an 6-8 hours later you have a fab meal. I do loads of plant based curries and stews in it and the batch up and freeze. X

    I feel like I'm in desperate need of a full-on do nothing day in all honesty.... the weekends are always hard for me. Add daylight savings time into the mix as it's messed up my sleep schedule along with me struggling to get any time in to study for a mid-term, and you get a bunch of sleep-deprived stress.     The more plant based I eat the better I feel, meat and dairy make me heavy and sluggish! Ugh I live in Ontario as well and the inflation is insane. Between gas, rent, insurance and food I’m barely keeping my head above water. Sad to see the state of this country. On a positive though, I love your videos and thank you for sharing! 💕

    One of my go-to easy plant-based meals is tofu stir fry. I marinate pressed extra firm tofu in soy sauce, maple syrup and a ton of ginger, then use the leftover marinade as the sauce for the veggies and rice. With leftovers you can heat it up in a pan and throw in an egg for fried rice.

    I totally support to move to more plant based meals 🌿 hummus and beans burgers are so easy to make. You should check Cucina Botanica youtube channel, she is Italian and the recipes are very good!

    Honestly, protein isn’t difficult to get even with a full veggies/grain or potatoes meal. Protein is over hyped/valued and unless you’re not getting enough calories, you will be getting enough protein. The whole ‘complete protein’ thing is also a myth that has been perpetuated for decades. Of course don’t take my word for it.
