I just made this and I've tried several several keto pizza recipes and this is so far the absolute best crust... You got its cheese and eggs mix well and it doesn't taste eggy and you don't have that aftertaste like when you use almond flower.. Good recipe man thanks

Yes! I've had several people that can't get cottage cheese and their country use ricotta and said it works perfect! One person did every cottage cheese recipe that I have using ricotta and said they all worked great.

We've tried this for pizza before; the crust was still limp and spongy. Tried straining extra moisture from the cottage cheese, but didn't make a difference. Have you tried adding coconut flour or something to make it more like a real crust?
I think the parmesan helps with the texture. If you add more than I do, it definitely helps. A quarter teaspoon of xanthan gum makes a difference also. You just need to heat about a tablespoon of water in and mix it up together and then add it to the mixture and make sure you get the moisture out of the cottage cheese with a salad spinner like I did in the cottage cheese pie video. I'm working on a deep dish crust now using that.

Wow that is the one thing I miss is a good home made pizza. I use to make them with Naan flat bread and basil pesto instead of a tomato sauce wow to die for. Sadly haven't come across a good keto naan bread recipe. I noticed the crust was a bid thin what would you suggest to make it a little thicker? That way I can sharpe it like a naan bread. Thanks for all your recipes. BTW LOVE that Yellow stuff sauce I now use it as my "soup up" mustard instead of just plain.
You can add more parmesan and that will do fine or add a quarter teaspoon of xanthan gum dissolved in some hot water and then add it into the mix... Gelatin may work as well, but I haven't tried that yet. So glad you love the yellow stuff! Nana would be happy 😁
Theres a better way to measure that parchment to fit exactly. Keep folding until it looks like a paper airplane, put the point in the middle of the pan then cut the open end at the INSIDE of the pan length. You'll get a perfect circle that fits perfectly. I crunch it also. Do this for every round pan you line with parchment. ❤ this pizza crust is a HOMERUN and this pizza is irresistible my man. Love the red nails...lol

Tomato paste works better than sauce does .... not as wet and the dough cooks a little better. You can thin the paste out with a little sauce if it is too viscous for you.
Love me some thin crust pizza! I saw ketofocus make the flat bread and she added the parm into the egg and cottage cheese blend. Great addition for flavor as well as stability. I wonder if adding some beef gelatin to the mix would make it any sturdier? I will try that!

I prefer a firmer crust that will hold up when you pick it up. I use egg white bread ingredients for pizza crust, which turns out great, and you can load it up with toppings too!
Nice! You can also add more parmesan to this than I did, somewhere between a quarter and a half cup and it holds up really good 😁 I will probably do another video about that for people that don't like the New York slice
@@southernketo That may work for some, I'm not a big parmesan fan, some is good! I have seen people put crushed pork rinds on the pan then what is being used for the crust to give it a different textured bottom crust.

This might seem like a bonehead question but I just made your keto flour and you said that that could be substituted one for one for any recipe that needs flour how about pizza dough would your keto flour rise with yeast to make a pizza dough?
I think it should, but I haven't tested it yet. In baked things, it still needs baking powder, baking soda, etc. You would still need to add some sugar to activate the yeast. Let me know if you try it. I plan on working more with it in the new year
so would it have to be real sugar I would not think that artificial sweeteners would work I’m not sure about that could it be a little bit of honey what would be the best to use with the least amount of carbs because I do want to try it
and the next technical question do you think this flour would work in a bread maker because now that I’m not doing normal bread I have this really nice bread maker that it’s gonna collect dust so if I can use it that would be fantastic and it’s so much easier than doing it by hand

I've never tried it with light cottage cheese so I'm really not sure how it would come out... I only use full fat in anything that I make because high fat is important for Keto
This is a good recipe, and the pizza is delicious, thank you. There is just one downside: eggs become very unhealthy and they lose a lot of nutrients when baked in the oven in high temperature, so it is definitely not recommended to eat this in a regural basis.
You're very welcome! Eggs will lose over half of their vitamin d when you bake them in the oven, but I wouldn't say that would make them unhealthy. I like to get my vitamin d from the sun anyway, so I don't see too much of a problem with it. I make them once a week or so. Thanks so much for watching 😁
@@southernketo losing vitamin d is not what makes them unhealthy. Eggs cooked in high heat oxidizes the cholesterol, and what you get from that is oxysterols. But yeah, most people have decided that it is ok :)
I think it needs something like almond or coconut flour to give it better structure so that it can be less floppy. This finished looking more like the omelette pizza I sometimes make.
You can add more parmesan to it if you want. It holds up a little better that way. Sometimes I make it like that and sometimes make it like in the video.
Let me know how it comes out with a pizza stone... I've got a outdoor pizza oven that I've been wanting to try and make a crust for that would be as good as a standard one, but haven't got there yet... Enjoy!
My better ran right off the pizza stone. I had to quickly move it over to a parchment line jelly roll and to keep the batter from running away. I think I’ll try a little less cottage cheese or one less egg next time.
Here is something I do - drop the park cheese on the (sprayed) parchemt first, then top with the batter/crust, then top with additional parm as per the video :D
Here I’m always lookin for keto bread & Still can’t eat it coz you use a ton of eggs every time! Is there no eggless recipes? I surely thought pizza crust would come under that category. 😔
Well darn! No, the thing is with Keto baking since there's no gluten, you really have to have something to stick it all together and eggs are the best at that. You could try one tablespoon of chia seeds and two and a half tablespoons of water mixed together until it forms like a gel to replace eggs. It would be an experiment, because I haven't made the bread with it or the pizza dough with it, but I have used it before to replace eggs and it worked well in a vegan recipe. Let me know if you give that a try and how it turns out... I could definitely test it in some of my recipes as an alternative if so...
@@southernketo ok, Guess I can try it & certainly understand the importance of it’s binding properties for these dishes. Truthfully but some reason I can eat (or Could) cookies & stuff w/ an egg or two in it if baked till done w/ no problems. Couldn’t have custard or half baked, soft cookies coz the egg would really get me then, but 4,5 eggs or more makes me nervous a bit. I’d think getting upwards of that like the twelve y’did, might actually taste eggy. Love all your recipes tho, just have to find the right fit for bread, pizza & dumplings. Yes! I have a guy in Ecuador that has tried every one of my cottage cheese recipes with ricotta because they can't get cottage cheese there. He says they all work perfect 😁
I suggest NOT cooking with olive oil or on unsafe nonstick surfaces. Make sure the nonstick surface doesnt have any forever chemicals in it. Also, its better to use avocado or coconut oil, tallow or ghee instead of olive oil because when u heat olive oil it goes rancid and forms transfats that are not good for you.
I appreciate you commenting. 😁 Those are all great choices, even olive. Olive oil doesn't form trans fats, even if you go past the smoke point, but that is a common misconception, but not true.
So the second one I made today turned out a lot better next time. I think I'm gonna make a casserole instead of trying to make a pizza, but it was delicious. Especially the sauce thank you so much❤😊
@@southernketo Yes, add the toppings then bake more. I think any keto flour with gluten and/or xanthan gum would work. Something without a binder probably needs eggs.
Looked at Carbalose, Carbquik, King Arthur's Low-Carb Wheat, and a few others. THey contain dextrose and/or "natural flavors" which means chemicals & sugars they don't want to report. They ALL contained canola, palm or other processed seed oil. I am concerned not only with carbs, but with overall clean food. These products do NOT live up to that promise! I've used Victoria's flours, of which the last (bamboo, coconut, pecan, egg white protein etc) seems to work the best - and is a 1-1 CLEAN replacement with lower carbs and decent results. Maybe our dear Southern Man can do some experiments for y'all?

I just don't like to have to buy a bunch of exotic ingredients sometimes you can't even find. OOPS!! Should be Whole milk mozzarella. By the time you get done blending it, you won't even notice that little piece of shell. All and all it looks wonderful!

Whole milk moz is watery on pizza. That's why it's rarely used. If you want to use it, squeeze out the water, slice it up and let it dry unwrapped overnight in the refrigerator. I agree with Victor the cheese pull is better for pizza. You make your pizza the way YOU want.

The cottage cheese and eggs make it impossible to get a nice solid crust on this pizza. This comes out flimsy and you basically have to eat it with a fork and knife. I made three of these and baked them at different temperatures and the outcome was the same
This looks like a great 🍕 however, does it taste eggy at all? I have tried a couple of different recipes using substitute flours and I'm just not in love with them. My favorite way to eat a pizza is a low-carb tortilla. I'm not a huge pizza fan and don't like a tomato based sauce at all but I homemake my own fettuccine garlic sauce and I add mushroom and onion along with that pepperoni. I think I'm gonna give this one a whirl.

I prefer a firmer crust that will hold up when you pick it up. I use egg white bread ingredients for pizza crust, which turns out great, and you can load it up with toppings too!
Nice! You can also add more parmesan to this than I did, somewhere between a quarter and a half cup and it holds up really good 😁 I will probably do another video about that for people that don't like the New York slice
@@southernketo That may work for some, I'm not a big parmesan fan, some is good! I have seen people put crushed pork rinds on the pan then what is being used for the crust to give it a different textured bottom crust.

This might seem like a bonehead question but I just made your keto flour and you said that that could be substituted one for one for any recipe that needs flour how about pizza dough would your keto flour rise with yeast to make a pizza dough?
I think it should, but I haven't tested it yet. In baked things, it still needs baking powder, baking soda, etc. You would still need to add some sugar to activate the yeast. Let me know if you try it. I plan on working more with it in the new year
so would it have to be real sugar I would not think that artificial sweeteners would work I’m not sure about that could it be a little bit of honey what would be the best to use with the least amount of carbs because I do want to try it
and the next technical question do you think this flour would work in a bread maker because now that I’m not doing normal bread I have this really nice bread maker that it’s gonna collect dust so if I can use it that would be fantastic and it’s so much easier than doing it by hand

I've never tried it with light cottage cheese so I'm really not sure how it would come out... I only use full fat in anything that I make because high fat is important for Keto

Yes, I have had someone experiment with all of my cottage cheese recipes and ricotta works fine in all of them

This is a good recipe, and the pizza is delicious, thank you. There is just one downside: eggs become very unhealthy and they lose a lot of nutrients when baked in the oven in high temperature, so it is definitely not recommended to eat this in a regural basis.
You're very welcome! Eggs will lose over half of their vitamin d when you bake them in the oven, but I wouldn't say that would make them unhealthy. I like to get my vitamin d from the sun anyway, so I don't see too much of a problem with it. I make them once a week or so. Thanks so much for watching 😁
@@southernketo losing vitamin d is not what makes them unhealthy. Eggs cooked in high heat oxidizes the cholesterol, and what you get from that is oxysterols. But yeah, most people have decided that it is ok :)

I think it needs something like almond or coconut flour to give it better structure so that it can be less floppy. This finished looking more like the omelette pizza I sometimes make.
You can add more parmesan to it if you want. It holds up a little better that way. Sometimes I make it like that and sometimes make it like in the video.

My better ran right off the pizza stone. I had to quickly move it over to a parchment line jelly roll and to keep the batter from running away. I think I’ll try a little less cottage cheese or one less egg next time.

Here I’m always lookin for keto bread & Still can’t eat it coz you use a ton of eggs every time! Is there no eggless recipes? I surely thought pizza crust would come under that category. 😔
Well darn! No, the thing is with Keto baking since there's no gluten, you really have to have something to stick it all together and eggs are the best at that. You could try one tablespoon of chia seeds and two and a half tablespoons of water mixed together until it forms like a gel to replace eggs. It would be an experiment, because I haven't made the bread with it or the pizza dough with it, but I have used it before to replace eggs and it worked well in a vegan recipe. Let me know if you give that a try and how it turns out... I could definitely test it in some of my recipes as an alternative if so...
@@southernketo ok, Guess I can try it & certainly understand the importance of it’s binding properties for these dishes. Truthfully but some reason I can eat (or Could) cookies & stuff w/ an egg or two in it if baked till done w/ no problems. Couldn’t have custard or half baked, soft cookies coz the egg would really get me then, but 4,5 eggs or more makes me nervous a bit. I’d think getting upwards of that like the twelve y’did, might actually taste eggy. Love all your recipes tho, just have to find the right fit for bread, pizza & dumplings. Yes! I have a guy in Ecuador that has tried every one of my cottage cheese recipes with ricotta because they can't get cottage cheese there. He says they all work perfect 😁

I suggest NOT cooking with olive oil or on unsafe nonstick surfaces. Make sure the nonstick surface doesnt have any forever chemicals in it. Also, its better to use avocado or coconut oil, tallow or ghee instead of olive oil because when u heat olive oil it goes rancid and forms transfats that are not good for you.

1 cup carbalose flour, 2/3 cup cottage cheese, 1 tablespoon olive oil, 1 teaspoon baking powder. Mix with hands 5 minutes. Bake 7 minutes at 450.

Looked at Carbalose, Carbquik, King Arthur's Low-Carb Wheat, and a few others. THey contain dextrose and/or "natural flavors" which means chemicals & sugars they don't want to report. They ALL contained canola, palm or other processed seed oil.
I am concerned not only with carbs, but with overall clean food. These products do NOT live up to that promise!
I've used Victoria's flours, of which the last (bamboo, coconut, pecan, egg white protein etc) seems to work the best - and is a 1-1 CLEAN replacement with lower carbs and decent results. Maybe our dear Southern Man can do some experiments for y'all?

I just don't like to have to buy a bunch of exotic ingredients sometimes you can't even find. This bread is made entirely of things you can find at the grocery store. 😁 I've already started to work on a pizza crust based on the same concept. If I can figure it out come it will be a game changer 😁

Whole milk moz is watery on pizza. That's why it's rarely used. If you want to use it, squeeze out the water, slice it up and let it dry unwrapped overnight in the refrigerator. I agree with Victor the cheese pull is better for pizza. You make your pizza the way YOU want.
They do make whole milk low moisture but it's hard to find. Costco used carry it but they switched to a 2 lbs block of whole milk string cheese.

The cottage cheese and eggs make it impossible to get a nice solid crust on this pizza. This comes out flimsy and you basically have to eat it with a fork and knife. I made three of these and baked them at different temperatures and the outcome was the same
Add more parmesan. It will totally get crispy with more Parmesan.

This looks like a great 🍕 however, does it taste eggy at all? I have tried a couple of different recipes using substitute flours and I'm just not in love with them. My favorite way to eat a pizza is a low-carb tortilla. I'm not a huge pizza fan and don't like a tomato based sauce at all but I homemake my own fettuccine garlic sauce and I add mushroom and onion along with that pepperoni. I think I'm gonna give this one a whirl.
