Poscas are better for journaling because they dry matt so you can write it colour over them. I use the Ivory & Beige 8k chisels for what you were doing and as bases in my sketchbook, and they’re fantastic.
I go for covering joins too. I agree with the layering approach and you explained it really well.

It's all practice, I promise! I've not taken any courses. Try copying other writing that you like to get a feel for how to move the brush pen :)
