Thank you for this video, I think it is the only video on the web where a Togishi of Ivan’s calibre talks about their stones. It would be amazing to see some of those Uchigumori finisher/near finishers in action (in fact just seeing Ivan in his element would be fantastic regardless of the stone). Thank you again for the video - the best 25mins I have spent this month
Uchigumori is one of the stones I use most often in my daily work, and I will soon be filming using it in an upcoming video of the sharpening process for one of some knife. Please wait as we will do our best to make sure you enjoy our videos every month.
I will preface by saying no certainty here at all from me, but my guess for that blue stone is that it's from Maruoyama. I have two Ao Suitas from that mine, one is dove grey with red renge and is very much like most of the uchigumori stones Ive used. The other though, has more of that stark blue color with white lines running through, is a bit harder than average but also in that 3-4k region. I actually use it to step up from Natsuya. I wouldn't bet on it, but it does share enough similarities that if I had to take a guess, that would be it. Anyway, awesome video! I love stones too and like seeing other people's collections. Some real killers in there. I will have to get some NSKs to go with my natural stones.
I saw a stone just like your unknown striped one for sale a few months ago as a Maruoyama Ao suita. Thanks for the video! I watched some of your videos years ago when I first got a yanagiba to polish, and they really helped me set my goals for each step of the way. Ever since then, I've developed an obsession with these money-gobbling rocks, unfortunately without the funds to support it... lol
This was a wonderful watch, thank you very much for the effort you put into this. I’d love to see more about stone progression. Why certain stones are chosen, even why there is a progression at all and why you can’t just jump straight to the final finisher. I understand it’s different for every knife, so maybe you could go over what the stone progression for the Kaiju was and explain some of the science behind what is going on at each step.
Thanks we will continue to do our best to! And yes as I have found from the many years I’ve been sharpening each steel, each blacksmith each forging style needs a different approach in the stones you use. It’s definitely worth diving deeper into for future content
Depending on the finer whetstone natural Or synthetic, each stone will have a different scratch depth or how deep the abrasive in the stone cuts. Even though very fine stones don’t appear to have a scratch depth when seen by the naked eye and look mirrored there still is a scratch depth at which they cut so it’s important to choose the right stone for the type of work being done.

Fantastic! Looking forward to it. Your videos are highlights of my TH-cam-ing when they come out!
Thank you for sharing your collection with us. It’s very impressive that you’re able to keep track of steel pairings at the level you do!
Fascinating. The stones are beautiful themselves. Imagine having this level of knowledge...

Thank so much for the insight, it’s a very interesting stone that has two completely different functional sides. So it’s puzzled me and others as well
So excited waking up to this video!
Hermosas piedras 😊 maestro. Saludos cordiales 😃 desde México.
Whetstone galore, love your set up so much. I aim to have something similar one day.
Thank you for this video! Lovely descriptions and amazing collection 😮

That first Ohira suita is so gorgeous. I wish I could find a source to purchase stones like this. They are hard to find it seems.
Yes its getting much more difficult to find these
do have video on how sharpen chef knives
Hello , no unfortunately not yet, but it is something we are thinking about in the future
What is the reason for the scratches on the blade surface when the master grinds with a fine whetstone?
Depending on the finer whetstone natural
