Usually choux pastry is not something you want to change. I think if you were to do that, it wouldn't grow and you would end up with rocks. You can, however, fill the profiteroles with chocolate and/or cover them in chocolate.

Maybe next time try to leave them in the oven for few minutes after you turn it off ..with door slightly open..make sure you prick them with a skewer..so steam is allowed to get out.. try to use bread flour for choux pastry ..
