Well I thawed a roast to put in the slow-cooker but forgot. So I surrendered and googled if I could make a roast in the instant pot. Just a second comment. It occurs to me that this is very similar to an avgolemeno Greek chicken soup, which if allowed to thicken makes a sauce very similar to this. No wonder it looks so comforting and familiar.
Got all of your books. Instant pot is THE way to go. The portions are huge for me. Can I just half everything for smaller portions without effecting the outcome? I have a tiny 3qt pot too.

Hi you said to put the shrimp in raw and then said just right before you serve it. I know shrimp doesn’t cook very long at all but doesn’t need even a minute or is the keep warm going to just cook it while it’s sitting there?

Jeffrey, in Rochester NY where I live, we make artichokes French, which is the francese preparation on artichoke hearts. It’s to die for!

This looks so delicious! I need to get some more arborio rice. It's the only thing I'm missing.
Calrose or sushi rice are also acceptable substitutes, if you can't get Arborio or Carnaroli.

Yes, he sqeezed the juice out. Maybe strained it to get any seeds or pulp out
