@Laaiba don't be too hard on yourself when you make mistakes along the way. I've accidentally bought cereal with animal derived vitamin d3, my friends grandma accidentally sent us the wrong refried beans one time, meaning there was lard instead of vegan butter. Whatever reason you have for being vegan, whether it's for your health, environmental reasons, or concerns about animal welfare... Don't punish yourself if you accidentally slip up. It happens to everyone from time to time. Also, if you are short on time to to Taco Bell and order the black bean chalupa fresco style, or the regular bean burrito and ask for no cheese, add potatoes. So good when you are short on time and can't cook yourself.

I had always adored animals. Carried bugs and insects outside instead of killing them, always got rescue cats and dogs and not from breeders, bought products that specifically said not tested on animals. All of that. Now, I'm not a fan of how peta conducts themselves all of the time, but I will say they are very effective from time to time. Watching Meet Your Meat is what made me go vegetarian initially. Then remembering that I was on soy formula when I was a baby, my mom could not nurse and an allergy panel came back that I was allergic to many things, but dairy and eggs were at the top. Seeing how the chickens were kept to produce eggs and the fact that veal is connected to the dairy industry and I had an allergy to milk - all of that is what made me go full vegan about 3 months after I went vegetarian. And Taco Bell is probably the best fast food restaurant for vegans when you are short on time. However, homemade Mexican (or TexMex) food is way better. I can find some recipes and share them with you if you like, Mexican is one of my favorite cuisines and is very easy to make vegan

I made this tonight, and it was outstanding! Very "chickeny". Almost indistinguishable, although I left a little too much moisture in the meat mixture. It was less "dry" than real chicken, which is not a bad thing at all. When I make this again (and I will definitely make this again) I'm going to try frying it American style (with the flour on the outside). I Like it both ways.

For dipping sauce, try mixing sesame oil, chili garlic paste, powdered peanut butter, soy sauce and agave nectar. It's so delicious! I will be trying your jackfruit chicken recipe soon. It looks yummy!

I dehydrated mushrooms and made mushroom powder. It’s wonderful. I also made mushroom broth. Great stuff. I also dehydrated mixed veggies. Powdered those . Now I have veggie powder. I use it to make broth, seasoning for any recipes. I’m happy with my powders.

Why don't more people make jackfruit chicken? Around here, it's prohibitively expensive, and never fresh, if you can even locate a supply (I've seen it twice in the twenty-seven plus years I've lived around here.) and not even the local import grocery will order cans, unless you request and prepay a whole case. But the next time my son has business out of state, he might be able to bring some home. Thank you for this. It looks delicious. I have made your carrot taco meat, and then, I used it to make a vegan chili cheese burrito. It was delicious!

I made this today for a potluck at work that was themed "fast food recreations" I made this being a tad skeptical at first due to the pea protein but at the end it made the best vegan chicken I've ever had and i couldn't taste the potein powder at all. No one at work will even know the difference between this and the regular ❤

Very cool! I need to get some methylcellulose! One thing with jackfruit that I've noticed is that if you don't remove the little core (there part that you pinched), I had some stomach cramps after eating, so I always cut those off, and just use the fruit without the seeds. If you don't have that problem, then no big deal!
Saw this video and immediately thought to cook the jackfruit like you did at the beginning for Chick'n and Dumplings. I finally did it last night and it is GREAT! I have been struggling with jackfruit but now I'm not! 😭❤ thank you for your help. I will be getting the book soon!!
I remember making my own version of Plant based Korean Fried Chicken using Young Jack Fruit and took it to a church lunch. There was a lady who just wouldn't believe that it is not real chicken. I didn't know what else to say to convince her that it is not real chicken. I didn't use any MSG, mushroom powder, or cellulose stuff either. And I didn't bother removing the seeds. You can drain and grill or pan-fry the young jack fruit pieces (til they start to get colour) as it comes out of the can. Then coat them in potato starch or corn starch, dip them in egg, coat them in Panco type bread crumb. Or if you don't wanna use egg, dip the pieces in a batter (potato or corn starch and water/veggie stock and soy sauce, optionally can add rice flour for extra crunchy texture), then coat it in Panco bread crumb. Then deep fry it twice. Take the pieces out of the oil before it becomes golden brown and then fry them again after a couple of mins for a short time. The sauce is a mixture of Korean Gochoojang chili paste, rice syrup (or sugar, agave or any other sweetener), soy sauce, cetchup/tomato sauce and water/stock, all in a saucepan to simmer for a short time. People like to either dip them in the sauce when eating or toss the pieces in the sauce pan with the sauce before eating.
I forgot to mention garlic powder or minced garlic in the in the sauce. Minced onion or onion powder and sesame oil are also good int the sauce, but optional.

Can you make a large batch and freeze them for later cooking? Like at the “wrapped in plastic” stage can you just leave them in the freezer until you want to make them in a few weeks?

Have you found any viable replacements for methylcellulose? I know you love it for it’s binding and firming properties but it gives my partner bad diarrhea and so any vegan meats like Beyond, Impossible, etc, are a no go in my household (or I have to eat it by myself).

I'm tempted to try and mix jackfruit into seitan. I had some left over soy skin flakes and added them to seitan and it broke up the texture nicely. Maybe jackfruit would be similar. 🤔

Buying your book now. You’re awesome. 👍🏽 I have a challenge for you. Make protein dense “meats” as possible using plants of course. I lift weights and have to eat large volumes of various plants to get 30gms of protein per meal. A cup of soy milk on the side is 7gs so the meal needs at least 23gms.

Can you make a large batch and freeze them for later cooking? Like at the “wrapped in plastic” stage can you just leave them in the freezer until you want to make them in a few weeks?

Have you found any viable replacements for methylcellulose? I know you love it for it’s binding and firming properties but it gives my partner bad diarrhea and so any vegan meats like Beyond, Impossible, etc, are a no go in my household (or I have to eat it by myself).
He says it's a binder, so I'm going to try agar agar which is what I use to bind my vegan burgers. It's works great

Your ideas are truly extraordinary and I am sure they will be to a high extent customizable which is the only thing which could make me "follow" a recipe ;D Plus, your experience and skills will make this book and incredibly valuable addition to any plant-focused and plant-based kitchen! The only thing I will miss is your sense o humor but luckily you are probably not leaving this platform anytime soon :D

I'm tempted to try and mix jackfruit into seitan. I had some left over soy skin flakes and added them to seitan and it broke up the texture nicely. Maybe jackfruit would be similar. 🤔
