50ml heavy cream
6g tea leaf
30ml hot water
125ml heavy cream
10g starch syrup
210g Couverture sweet chocolate
■Glacage chocolat
5ml cold water
1g gelatin
20ml waetr
35g sugar
13g cocoa powder
25ml heavy cream
