Looks so good! Yes this is what most typical American families do....we make things the way we like them! The addition of the chorizo and chicken was a fabulous idea. I may have to steal your idea 😋

    *_RECKY & CAROL :_*
you know i'm an old Texas grandpa. i have been helping in, or running, home kitchens since i was a young feller. so now after 70+ years, i have a few pretty good recipes stored up in my noggin. here's a couple i want to share with you; my own personal Biscuit recipe, and my method for making Cream Gravy. these Biscuits aren't the best in the world. i would never make that claim. but they ARE damn good. they also don't take special ingredients. they are hard to "mess up". and they are easy to make. my kids now make these for their own kids, and a couple of the grandkids are making them in their own homes. if you want to jazz them up, you can add whatever you like to the Biscuit dough. cheese, bacon bits, sauteed onions, or -- as i do sometimes -- a bit of sugar to sweeten them, then slice them like a burger bun, cover in fruit and top with (whipped) cream for a nice "shortcake".
    Papa Grim's Badass Biscuits
2-1/2 c flour (cake flour preferred because the low protein content makes for more tender Biscuits)
1 T baking powder (NOT baking soda)
1/4 t baking soda (NOT baking powder)
1/2 t salt (can be cut in half)
1/3 c liquid fat (veg oil, melted lard, melted butter, or Drippins, etc)
3/4 c milk (slightly sour milk is OK)
    preheat oven to 450f
    blend all dry ingredients
    blend all wet ingredients
mix wet into dry only enough to bring them together. DO NOT OVERMIX!
drop fat golf balls with 2 spoons, or roll & cut (personally, i prefer drop Biscuits)
    bake 10 to 12 minutes
    =====
    METRIC UNITS :
    600 ml flour
    15 ml baking powder
    1.5 ml baking soda
    3 ml salt
    80 ml liquid fat
    180 ml milk
    oven at 230c
    =====
    FOR GRAVY :
throw some seasoned loose pork breakfast sausage into a pan (for more Gravy, add a little extra Drippins/oil to the pan)
cook it until it's about 2/3 done and break it into small bite-sized pieces
slowly add flour to the pan until it coats all the meat bits and the pan is starting to think about drying up
stir constantly until the flour starts losing it's "raw" smell and starts getting a light nutty aroma
turn the heat down to LOW
any oil+flour in the pan should be really thick, breaking up when stirred, but liquid when left alone
start stirring constantly and begin adding cream and/or sweet milk until the sausage bits are just well-covered
    keep stirring
    keep stirring
    keep stirring some more
as the Gravy starts to thicken, adjust the salt and pepper to your liking
when you think that maybe you've added too much pepper, give it 4 more grinds
    keep stirring
when the Gravy is nearly as thick as you want it, take it off the heat
the Gravy will thicken just a bit more after it's off the stove
    =====
    OPTIONS :
during the cooking process, Gravy can be seasoned/augmented as you like it with things such as; red pepper flakes, garlic, chopped onion or onion powder, nutmeg, minced bacon, mace, chives or chopped green onion (for color), 5-spice powder... just use your imagination and do what makes you and yours happy.
try it served with a couple of fried eggs over all. (a runny or creamy yolk that you can bust makes it real nice.)
try serving with sides of stewed fruit (i like apples with a bit of cinnamon, ginger, and nutmeg), sweet Grits (topped with butter, cream, and sugar), sliced raw tomatoes, or just about any other sweet or savory thing you might like with.
this meal pairs nice with a BIG cup of black coffee, or strong breakfast tea.
finish off the meal with a fat slab of cornbread smeared with butter and a bit of honey, sorghum, or molasses.
top the Biscuits and Gravy with a little bit of grated cheese, but don't overdo it (use whatever cheese you like).
Biscuits and Gravy is always better when eaten with friends and loved ones.
    =====
    A NOTE ABOUT "DRIPPINS" :
Drippins is the fat left in the pan after frying bacon or certain ham steaks. this fat is a prized kitchen ingredient that is used often in Southern kitchens. if it is used frequently, the jar of Drippins is kept near the stove for easy access. otherwise it is stored in the refrigerator for longer life. Drippins can be used (sparingly) like butter, to flavor cooked items, or as a condiment for things such as Grits, cooked veg, soups, stews, burgers, etc.

Recky, I think what you said about not being limited by cultural combinations is the true core of the American cooking or dining experience. As you said, sometimes the combination doesn't work well, and sometimes you discover a combination that you realize has been missing from your life.
Both culinary success and failure teach lessons

Ok Carol did a FANTASTIC JOB with the meal.
Adding in the chicken and chorizo was Perfect (both chicken and chorizo) are staples of Spanish cooking the adding in of sour cream is something I have never tried But to cut down on the spicy ness of the meal makes perfect sense.
The muffins/Biscuits are Not something you would normally pair with Spanish rice but they too looked delicious.

Time to try "tuna casserole?" :)
Yummy creamy baked pasta dish with canned tuna fish [drained], pasta, cream soup base, grated cheese(s), milk (extra if putting in dry rather than pre-cooked pasta; that way it just cooks in the pot and soaks up the extra liquid), mixed vegetables, various herbs and spices, etc. Pretty much a one-pot meal that takes about an hour-ish to prep & cook. Basically just mix it all up well, and plop it in the oven for an hour, take it out to stir half way through so it cooks evenly and doesn't scorch the outsides.
Can also sub in canned cooked chicken creast (cubed) and some yellow curry powder for "chicken curry casserole." Also yum!

Two beef enchiladas smothered in Jalisco style red salsa (which is kinda medium thanks to lots of cumin and black pepper, sour crema and cotija cheese with a side of black beans and esquites, which is a zesty, creamy, spicy corn kernels dish. As a Puerto Rican who was born and raised in New York, I've seen it all added to Spanish rice. Chicken, shrimp, pork, beef, Italian sausage, SPAM and even eggs! 😅
My personal favorite has always been a mix of chicken and pork sausage.
BTW, it's even better if you replace some of the water with coconut milk or beer. Made that way it's even better the next day up to three days later if kept in the fridge. Personally, I live alone but make enough for 8 servings each time, store 3 in the fridge and 5 in the freezer and consider it my meal prep. 😂 I always start eating the day AFTER cooking it though, or at least a few hours later after it's been cooled, refrigerated and refried for the best flavor. The flavors need time to meld and develop. 😉👍

Looks de-lish! Last meal of this day will be dish made with Polska Kielbasa, cabbage, apple, zucchini, carrot, onion, garlic, paprika, cumin and chicken broth. May add a cornmeal muffin. :) BTW, when you make your Jiffy muffins, do you make just the 6-8 muffins indicated on the box? I add in more loose meal, bit of water and stretch it to make a dozen. Bit less sweet, which is fine, and might as well net a few more muffins. Yum! 😊

Spanish or Mexican rice is made by browning white rice in fat, such as lard or cooking oil. Onions and garlic are added for flavor while the rice is browning. After the rice begins to turn opaque and golden brown, it is brought to a simmer in a combination of chicken broth and tomato flavoring, which can be tomato sauce, paste, salsa, or bullion. Parsley can be added for a little color but does not change the taste very much. Cilantro, on the other hand, adds a very unique flavor and can be substituted for parsley or added in addition as a complimentary fresh herb. Cumin, oregano, cayenne, and chili powder are seasonings often used in the dish. Sometimes vegetables are added such as chiles, corn, peas, bell peppers, or carrots.
Simply speaking it is a white rice that absorbs a tomato base with seasonings added. It is often a side dish in the USA with Mexican food.
Looks like you made a yummy dinner

Carol, you outdid yourself! That looks amazing. I love how you added your own touches with the chicken and chorizo. Plus, the sour cream! Great idea. I also love it when you try something new and you're speechless. That is so sweet! When you silently hold up the package, I think "yep, that's a recipe she's going to try again". Like the first time you tried ranch dressing in something. Sorry, I don't remember what it was, but you looked so happy with it! I felt the same way the first time I tried chocolate pecan pie right after I moved to Texas in 2000. The first thing I did was to get the recipe and it's part of our holidays now. I love trying a new recipe and going WOW I've never had anything like that before, but I love it. P.S. It's rainy here right on the Texas gulf coast, so I'm making breakfast tonight as comfort food. I have two quiches in the oven. Quiche Florentine and a grape tomato and fresh basil quiche. We have a tenant in our carriage house and she workds long hours. She's actually our hairdresser and we've known here since 1986! I make her an extra dinner usually, so I'll send one of them up to her.

Recky - exactly, in fact that's kinda the "American Way" try stuff together, if it works, great, if not... try it again a bit differently - rinse repeat until it works. :) But since you mentioned it one of the cornbread things might have blended a bit better. Especially since you both like cornbread. But Carol's curiosity got the best of her and that works too :).

Hello , I'm here to share with you and your audience a Spanish rice from Puerto Rico 🇵🇷 they have many versions but one of favorites is Arroz con pollo in English means Rice with chicken and is very easy to cook
You take a amount of chicken for tge amount of people depending how much chicken you will eat cut it in pieces and wash them then you put it in the pot with some garlic and onion powder salt and has to have Sazon Goya that's the trick in all Spanish dishes basically in any Hispanic or Latino cultural cuisine, add water where it covers the chicken and stew it once the chicken is cooked you will add the rice 1 cup for 3 pieces of chicken for example if you have 6 pieces of chicken you out 2 cups of rice in the same broth of the chicken add a little more salt because the rice will absorb the broth and create the Spanish Flavor and just cook the rice and chicken once the rice is cooked all you have to do is some beans if you want is optional and a simple salad and you have a Spanish Rice hope one day you fond this comment and give it a try if you do hope you enjoy it 😊

I believe in America we mostly say "you do you." 😉👍 Add and mix what you want, it's YOUR food. 🤷🏻‍♀️ Just the other day I made a meal that combined my traditional Spanish with Italian, Asian and a bit of Indian foods. I just called it my "melting pot meal." 😂 An American can't argue with that! 🤣
Honestly though, those Knorr packets are sold so you can cook things easier and add what you want to them. 🤷🏻‍♀️ I believe that particular mix is called "Spanish Rice" because the seasonings used in it has a little bit of something from most Spanish speaking countries traditional way of making yellow rice so it's easy to use as a base if you're feeling too lazy to do it the traditional way. Though you kinda still did a bit of the traditional by cooking up some onion and garlic first. 🤔 It's just that in most Spanish speaking countries you'd be frying up some "sofrito" first, which usually contains onions and garlic in it (and often some bell peppers and/or sweet peppers, along with parsley, cilantro and/or culantro, with various variations depending on which Spanish speaking country it's coming from) instead before browning the meat and throwing everything else in the pot.
BTW, it's extra delicious if you replace part of the water for the rice with coconut milk or beer! 😆👍

I take the Spanish Rice packet and do as you did with onions and garlic along with some green or red peppers and add some ground beef or pork, And along with the water it calls for, I will add a can of diced or chopped tomatoes and seasonings like the Slap yo Mamma that you have or any hot sauce. I eat it with sour cream like you and a little grated cheddar cheese!

A lot of us use the different rice and pasta mixes as a base for dinner and add whatever we have that we like to make a full meal. So you are definitely doing this the American way. It is typical for us to have some kind of bread with dinner. Biscuits, cornbread, sliced bread. Whatever you have and enjoy works. Tonight I’m having leftover chili with cornbread. Carol,
You did a very good job with dinner. All I had was two bowls of homemade chilibeans with several heavy shakes of Tabasco, and broken up tortilla chips in it.

I like spanish rice stuffed into a hollowed out tomato, or red bell pepper add some tomato sauce and cheese and bake

There are no set rules for Spanish rice, or anything else for that matter. Eat what pleases you. Every meal is an adventure...some amazing....some not so much. Go for it kids.

i believe anything that is described as spanish style would traditionally has tomatoes in it, it became known as that in the early part of the 20th century but probably the meaning might evolve into other ingredients too

I made my own Dirty Spanish Rice a week ago and it came out great, other than a bit burnt to the bottom of the pan.
Basically a combination of "Dirty Rice" and "Spanish Rice" of my own making. Based on some vaguely recollected TH-cam videos on how to make both. Anyway, turned out pretty dang nice. :)
Probably not any kind of "traditional" way of making it. But, it got the job done and fed me for a week, since I made a whole pot of it... ^_^

I love one pot meals. I do the same thing with Zatarains jambalaya rice mix. Add chicken, sausage, veggies and sometimes even beans. Crazy, right? In fact, that's what I'm having for dinner tonight.

Spanish Rice always has bell pepper in it and it has tomato sauce.. The spices are usually a little more moderate. MEXICAN Rice can have red pepper, but it's not required. It tends to be Spicer and can have chili peppers. I prefer Mexican rice without bell peppers as I'm allergic to them.
