A lot of people seem to forget that he's hundreds of years old and functionally immortal (although they did retcon the whole phoenix granting immortality bit in favor of the taking/eating the paradise plant every 1000 years, I think). It's kind of messed up and all over the place, there's a joke at one point where Baba, Roshi's older sister, gets angry at him for missing their mother's birthday, implying that she's still alive with Roshi being over 300 at that point already. His whole family line is superhuman but never really detailed past dub jokes or retconned information.
Even here Vegeta seems very much in character, the way he talks to Roshi makes sense, since they didn't interact all that much in the long past. Nice touch!

No matter the strength gap is you're less skilled and caught off guard you can be overcome in a fight like that.

I’m proud of Vegeta for not kicking Roshi out of the ring after realizing that even though it was Roshi’s mistake, it was also him that saved Vegeta from being cheesed out of the tournament. Say what you want about Vegeta, he’s had by far the most overall character development in this series.

I’m sorry, there no way you can convince me Roshi was a better choice fighter than trunks or Goten. It just doesn’t make sense. Hell you could’ve traded roshi, krillin or Tien for Goten & trunks.
