    Lol they never explained what "Tinga" is. Tinga is the meat on the tostada its what is called a "guisado" which is some kinda stewed meat in this case tinga is basically just boiled chicken breast its boiled with spices and garlic and onion so the flavors get boiled into the chicken then its shredded, once you get your chicken shredded you start on the sauce, tinga requires a LOT of spanish white onion, you chop it into thin slices and fry it in corn oil until it is caramelized you then add your homemade tomato sauce and your chipotle sauce and mix it all togheter season and add a little chicken broth from when you boiled your chicken, lastly you add your shredded chicken to the sauce and let this cook until it thickens, after you let it cool down a bit you can assemble your tostadas which is... the corn tostada of course, pinto beans, the tinga, and then on top a little bit of mexican crema, mexican queso fresco, cilantro and some extra hot sauce or chiles en vinagre if you want some extra heat. This is one of my favorite dishes! My mom used to make this a lot growing up and i now make it for my husband as well its nice to hear about it in a video getting more recognition 😊💯👍💞

      I was raised in Mexico and to my shock I had to ask what tinga was when I started working at a Mexican restaurant in my 20s in the US😭 turns out I knew what it was but didn’t know it had a name just called it a guiso😂

    I know all about the Torta Cubana. It was one of my favorite dishes when I was a teen, but it was slightly different from what you see in the video. The one I use to get has more meat. It was a carnivore’s dream.

    Soy Boricua, and I love Mexican food, my ex is Mexican. He taught me how to cook some dishes, and I taught him PR dishes. I have heard of all 3 of these dishes, and have eaten them. I've made tamales, barbacoa, pozole....the next dish I really want to make is birria mmmmmmm.....love Mexico and her people, and especially the food.🇵🇷🖤🇲🇽

    I love all the perolike food videos they always leave my mouth watering, but what devastates me is that I like in England and non of this type of food is readily available, I'd love to be able to come to America where there a these little pockets of culture everywhere!

      When you talk about having a bit of everything, you are mainly talking about New York City or California.
      Other places have surprising pockets of ethnic food, but the regionalisms are what's interesting there.
      But you can get Mexican food in any medium sized or larger city in the US that I've been to.

    tostadas de tinga and huaraches are SO good. I don’t like anything spicy 😅, so I don’t like tinga that’s spicy though. Tlayudas are also something I highly recommend everyone try at least once, and Guanajuato style enchiladas (mineras).

    Huarache de hongos is one of my absolute favorites. I had it for the first time when I gave up meat for Lent one year, and it quickly became something that I order on the regular when I see it on menus at restaurants.

      Hi! 🙋 I live in NYC, and for me the best Mexican and South/Central American restaurants are in Queens; in Jackson Heights/Corona neighborhoods. That is the ❤ of their community's culture. All along Queens Boulevard, Broadways, etc...stores, markets, cafes. I briefly lived in Woodside (next door to Jackson Heights) and the food was amazing. I've heard, though, nothing beats California authentic Mexican food. Any questions...feel free to reply! Where do you live?

      For me, the best Mexican food in NYC is from a taco truck in the Bronx. It's in the corner of Fordham Road & Valentine Ave. I've tasted Mexican food all across the 5 boroughs but nothing compares to this. They have been there for years! 👍 Besides tacos, they have sopes, tortas, gorditas, pollo a la mexicana and other foods.

      I'm originally born & raised in L.A. and living in NYC for almost 4 years. The closest thing I've found to legit L.A. Mexican food is at Taqueria St. Marks. On the weekends for brunch their chilaquiles are bomb! But the carnitas tacos are my favorite. They have great enchiladas, sopes, tortas and tostadas. I really love their beans too. I eat them with chips. And during the winter months I head over on the weekends for the posole, it's spicier than I'd like but still have great flavors. Good Luck!

      En el norte de México we call them "tomates" 🤷🏾‍♀️ which is closer to "tomato" 🍅 I'm from Sonora.

      You're right. The birthplace of tomato is central Mexico and its original name is "tomatl" for green tomatoes and "Xitomatl" for red tomatoes, so "jitomate" is closest to its original name.

    You guys need to do regional dishes. There are so many dishes that people don't know about. My husband is from Jalisco and my family is from Chihuahua. He never heard of chile pasado and caldo de carne seca (beef jerky soup). He can't get enough of them.
