I made a fruit lathe a long time ago. It worked pretty well. Drill powered with a set of spikes on a bearing at one end and spikes on the drill shaft. Turn it on hold the knife on the brace near the fruit and it peels the skin right off. Makes it eady to slice almost all the way through quick.

That said, with one knife, I can portion a fresh large pineapple into bite sized with minimal waste in just over a minute - this guy ain't got shit on me.

What I said was rather egotistical, but at the same time this video wasnt exactly posted to be instructional rather than showing off someone's skill. I have seen videos like these where the knife skills are spot on and leagues better than mine. Either way, what I said remains true - just over 1 minute, portioned into bite sized pieces.

These stalls at markets are everywhere throughout Asia and I appreciate the skill of these vendors like in this video. There is still a certain level of skill in his work. No, his not a professionally trained chef but he makes a living. There's a lot of critics commenting about where's the skill. This man has way more than a lot of people I know and takes pride in his work. Again his not preparing for a banquet or under time pressure and a budget like a commercial kitchen, restaurant etc. I love street markets and the individuals in them and the different ways they operate.
