    I'm from Minnesota. My Dad grew up in Fort Madison, every single trip to Iowa we ate tenderloin sandwiches, made rights, and fried catfish. Never once in 30+ years have I ever heard of an Iowa skinny,!? My guess is that it's an audience engagement technique or buzz word, and it worked the comments out of the wall! Really though, this version looks yummy, but we always had it with dill pickles, raw onion, and ketchup+mustartd. If you ever made it to the River Rock Café (closed now) the tenderloins were so big you could trim your sandwich and snack on the strips before you even took a bite of the bun!

      If you are looking for that again, just come to Des Moines on the southside. Smitty's Tenderloin. It's on Army Post rd. It's just like you described, it's huge and trim till you get to the bun. Just had it 2 days ago, again. Oh, and if you order a "skinny" they won't have any idea what your talking about. Just ask for a tenderloin.

    It's not a "Skinny"...it's simply a "Tenderloin"...the fact that it's a breaded, fried sandwich is a given. Traditionally, it's dressed with raw onion, mustard and pickles.

    A staple in Iowa - I am from there and had many of these big “tenderloins” as we call them. I have never made one and happy to know how to. I have never heard them called an Iowa Skinny - only “Tenderloins”.

      Thanks Linda, I'm from Iowa too and never heard the term Iowa Skinny, so I'm not sure where they got that from. It's just a tenderloin sandwich. Never used bread crumbs either, always just used the crackers, so I was happy to see her add them to the coating

    Great episode! However, I'm Iowa born and bread and NEVER heard a tenderloin sandwich referred to as a "skinny" - and I've eaten hundreds from all over the state in my 50+ years. Also, they are usually served with pickles, raw onions, and mustard on a lightly toasted bun. Mind you, I'd happily eat the one Bridget cooks. It looks outstanding. I just question the research.

      I agree - 23 year Iowa resident. I've never heard them called a skinny. But I've eaten way too many tenderloins and enjoyed every one!

    As a kid I grew up in a tropical 🐠 region of Central America . We had monkeys in our backyard. My grandma had a lemon tree, mango tree, coconuts, backyard chickens and she made us homemade bread daily. I never had a sandwich until I came to the us at the age of 7 . Matter fact I probably didn’t eat one until I was probably 8. Man oh man! Did I fall in LOVE! give me butter bread toasted with mustard, mayo and something inside yummy. At the age of 13 I spent a summer in California and my uncle had tomatoes growing in his backyard. It was a farm. They had everything. And he made me a BLT! Omg 😱 I almost died it was amazing. Again homemade bread, lettuce and tomato from the farm! What a day that was. Than he forced me to watch old westerns lol. They were terrible lol. But that sandwich I remember like it was yesterday!

    ATK is my go-to when I need it right. Born and raised Iowan for 59 years and I also never heard of "Iowa Skinny". If you want to know where to get the best pork tenderloin sandwich, Smitty's Tenderloin. Southside of Des Moines. But this time, ATK got it wrong. They are not breaded with mayo and we don't eat them with lettuce and mayo. Just ketchup, mustard pickle, and onion. Although it's not unheard of to add mayo and lettuce the majority do not.
    PS, if you go to Smittys and ask for an "Iowa Skinny' they won't know what you're talking about. Just order a tenderloin sandwich and you'll be satisfied.

    I grew up in Iowa years ago and tenderloins were a staple. As others have said, I've never heard anyone call them a "skinny". It was probably named a "skinny" by the same people who call Maid Rites "loose meats". :)

      According to Wikipedia it was Maid-Rite that first called it a loose meat sandwich, the guy who invented it in Missoula called it a "steamed hamburger". And they still call it that on their web site today, not in the name but in the description.

      You have 7 years on me and I haven't ever heard that term either. Wonder if it's something they say in another state like Minnesotahhhh. Just did a search on her and words like Massachusetts and West Virginia came up. So yeah, I can just hear someone with a MA dialect calling it an "Iowa Skinny".

      @@charliebrown1828 I thought the same thing. It needed pickles and onion. Maybe that's why they call this one the "Skinny", because it's missing stuff. That is my favorite sandwich though, and you can't find a good one near me, so I have to go to Iowa where you can't find a bad one. I think it must be the Iowa State Sandwich because they have it everywhere, made the same way, and done so well.

    I've been in Iowa 20 years and have never seen it called a "skinny." Also, it needs pickles, onions and some mustard. I have never seen it served with lettuce and mayo.

      Hah! I know what you mean. I’m from Cleveland, Ohio (northern) and when I moved to Columbus, Ohio (mid-Ohio) I saw one of those “You know you’re from Ohio when…” lists and they mentioned a walking taco. I had never heard of such a thing! Must have been a Columbus thing, lol.

    I used the mayo and egg wash to bread a cube steak. Flour, mayo & egg, panko works great! I even added Montreal Steak seasoning to the flour and the egg mixture. The combo makes a great sandwich. I also used it on fish filets with cajun seasoning which was also stunning. No more egg wash without mayo for this guy.

      When I first moved away from St. Louis and walked in to a Chinese joint and asked for a St. Paul, they looked at me like I was an alien. Then I began to explain it and the guy hollered at the cook in the back and translated my English to Chinese and they both laughed and laughed at the thought. 😊 so.. I ordered my egg foo yung with no gravy and took it home to make my sandwich. Oh how I miss them!

      The Iowa Pork producers calls it a breaded tenderloin, the Des Moines Register calls it a breaded tenderloin, any of the dozens of restaurants I've eaten at call it a breaded tenderloin. And yet you choose to take the word of a Vermont based company over facts that are easily searched from sources more credible in local Iowa knowledge.
      Are we sure the obnoxious gatekeeper isn't someone from the staff of Cook's County or ATK who didn't spend 3 minutes on a Google search and is now defending their lack of journalistic integrity?

It does exist, it's just not commonly called that. I dare you to go into any restaurant in Iowa and order an Iowa Skinny. You will get a blank stare, and then have to explain what it is you want. A lot of places don't even bother identifying it as pork, they just call it a tenderloin sandwich.

      Boogaloo Wonderland Sandwich - AMERICAS TEST KITCHEN
      INGREDIENTS: Serves 4
      1 onion sliced thin
      1¼ lbs. 85/15 ground beef
      1 tsp pepper
      ¾ tsp table salt
      SAUCE:
      1 cup ketchup
      3 Tbsp apple cider vinegar
      2 Tbsp Worcestershire sauce
      2 Tbsp packed brown sugar
      ¾ tsp dry mustard
      ¾ tsp chili powder
      ¾ tsp granulated garlic
      ¾ tsp dry thyme
      ¼ tsp pepper
      INSTRUCTIONS:
      1. Heat 1 Tbsp. oil over medium-high heat in a large non-stick skillet
      2. Add onions, ground beef, 1 tsp. pepper and ¾ tsp. table salt. Stir and cook until the onions have released all their moisture and the beef has been browned and no liquid remains, about 10 minutes.
      3. Make the sauce. Add all the sauce ingredients to a medium sauce pan, bring to a boil over medium-high heat, stirring constantly, until it starts to thicken, about 3 minutes. Remove from heat.
      4. Add 1 cup of the sauce to the beef and onions and stir to combine. Reduce heat to medium and cook until it thickens slightly, about 1 minute.
      BUILD SANDWICHES:
      1. On a sheet pan, spoon beef mixture onto 4 - 6 inch Italian Sub rolls.
      2. Add 2 slices American cheese over the beef mixture on each roll.
      3. Place on the middle rack of a preheated 350 degree oven for 5 minutes to melt the cheese and warm the buns through.
      4. Spoon the remaining sauce over the sandwiches.
      5. Enjoy.

    I lived in Iowa for many years and never heard of this sandwich. My father never heard of it either and he is an Iowa native born and raised. Strange. Learn something new today :) Boogaloo sandwich looks fantastic. Egg fu yun sandwich looks just as good :)

    I'm with every one else from Iowa, I've lived here my whole life and have never heard the term Iowa Skinny. It's just a tenderloin sandwich. To everyone else saying that you have to have certain toppings, it's a preference. I like it with everything, someone else might not. it's not sacralige to put something on it that doesn't fit your taste, lol. Love the show, just had to add that correction 😊

I, being from NY, am willing to go on record.....and this is very risky, and state that most people from Iowa have never heard of an Iowa Skinny. I also know 2 Iowans and they are both very fine people. I can't speak for the whole state or "most Iowans" on this topic.

    For anyone who wants to make pork tenderloin sandwiches at home but don’t want to/don’t have time to make from scratch-- Trader Joe’s makes a frozen pork schnitzel that makes a passable alternative-- they’re not as big as the homemade, but not terrible, and they fry up in a few minutes.

    FYI the St. Paul Sandwich has been around for 100 years or more. James Beard thinks it inspired the Denver omelet/sandwich.

      @@robgindc1 That used to be a standard sandwich on every restaurant menu. Beat an egg and add chopped ham, onion and green pepper. Fry it in a patty form and put on toast. They are good and very easy to make.

    I've lived in Iowa for 35+ years and I've never heard of Iowa Skinny, but indeed almost all American eateries have a pounded, fried tenderloin sandwich.

      Thank you! Came here to say the same. 40 years born and raised, it’s a pork tenderloin not an Iowa skinny. And it’s never served with mayo. Usually yellow mustard and onion, maybe lettuce and tomato
      Also elephant ear is a fair dessert fried dough

    I'm here to join the chorus of Iowans saying that this is called a pork tenderloin sandwich. I don't know who told you "Iowa skinny" was a thing but if it is I've certainly never heard of it. Also, tomato and lettuce? No. Yellow mustard and dill pickle slices. That is all.

      I don't mind the tomato and lettuce, but I agree with you that mustard and pickles are a must. I like to make a 50-50 spread of mayo and mustard.

    I have tried a similar sndwich to the st pauls while stay in south korea, they used moulds for frying on a hot plate, they where about half again as thick as the one you made. The part that sticks in my mind to this day is the unique sauce they used tangy/sweet/spicey fond memories. Thank you for all the recipes, take care,God bless one and all.

    I made some St. Paul sandwiches before. They are delicious. Its a shame that many Chinese fast food places across the US do not sell these sandwiches.

    My mom is from Iowa and we spent every summer there. I went to university there for 2 years, and have never heard of this sandwich.

    I grew up in Des Moines Iowa. My father, mother, sil, brother, multiple niece's and nephews have NEVER heard of this. I even asked at Easter Dinner if an I law from Wisconsin had heard of this "Iowa" sandwich. Love y'all, need better resources and research.

    I use 4oz loin chops to make my homemade tenderloins and my mom's rolling pin to pound them out. A tenderloin with everything is the tenderloin onions pickles tomato lettuce ketchup mustard and mayo.

    Thanks to Culver’s, we enjoy pork tenderloin sandwiches here in Michigan, too. Our local grocer also sells tenderized, breaded pork cutlets for home prep (texture reminds me of country-fried steak). So good! The best I’ve ever had, though, is the pork tenderloin sandwich from Peppermint Patty’s in Anaconda, MT. A must stop!

    We had skinny's in High School ( 70's) Dubuque . 2 slices of wonder bread with thin spread of butter/margarine on each, 1 slice of thin processed/canned ham, 1 leaf of iceberg lettuce.

      As an "Iowan" for 59 years. We don't call it a "skinny". It's just a tenderloin sandwich. And we don't put mayo, lettuce or tomatoes. Just ketchup, mustard onion and pickle. I don't know where they got their info, but not from here.

    You can get a fantastic St. Paul sandwich at the recently reopened and updated Little Tijuana restaurant in Minneapolis, just across the River from St. Paul and WAY up the river from St.Louis! Glad to know the story! It’s a great sandwich.

    Man!!! I don’t even EAT pork tenderloin, but that sandwich looks FABULOUS!!! I will certainly make a chicken sandwich using this method! Wow!!! That Detroit sandwich will be made as well, of course with improvised alternative ingredients. That looks delicious!!! I haven’t had Egg Foo Young in years!!! Can’t say I’d try the sandwich version, but I might visit an Asian restaurant this week!
    P. S. I spent a few weeks in Iowa, years ago, but I have never heard of that sandwich.🤔!!!

    I have lived in the Twin Cities (Minneapolis/St. Paul) for the majority of my life. I have NEVER heard of an egg foo yung sandwich nor any sandwich called St. Paul. One sandwich that is claimed by BOTH cities is 2 hamburger patties with cheese stuck between the two patties. Most call it the Juicy Lucy. American cheese is the usual cheese used but it can get pretty fancy using artisanal cheeses. The burger patties/cheese menagerie are usually cooked on a well seasoned flat top grill. A grated grill is very seldom used as the cheese can spill out if not crimped properly and a flat top can contain the molten cheese lava.

    The Le Creuset pan that he held commenting on lower sides is a superior pan. I own all All Clad and one Le Creuset and there is no comparison in quality.

    Every single one of these looks absolutely awesome! I've got to learn how to make potato rolls from scratch that are the right size for that Iowa skinny. I have been baking my own bread for so long that I just can't abide store-bought bread anymore. As for that Wonderland sandwich, basically just a smash-up of a sloppy joe BBQ Beef. It's really no more complicated than that. And the third sandwich with all the egg? Why not just fry the egg to portions at a time, instead of trying to cram all 4in that Skillet at once? And that would go so well on my homemade white sandwich bread! Thanks for another great episode of guys!

    We've lived in Iowa for over 50 years. It's a Tenderloin or a Breaded Tenderloin. They have a contest right now on Kcci. Iowa's Best Tenderloin sandwich. Don't know where the 'skinny' comes from.

      @@chadsmalley5961 Yep. ATK aren’t always right. For example they recommended the Matfer Bourgeat as a steel skillet ($90). But I ended up throwing it away. No matter how hard I tried to season it, it just never worked. And I’m still struggling with the second one. It maybe just me😂😂😂

    A proper "Iowa skinny" which nobody in Iowa has ever heard of (we simply call them tenderloins), would be the size of a dinner plate with a regular sized bun so that it sticks out of the bun in ridiculous fashion. That's how we do tenderloins in Iowa.

    I've tried a ton of different non-sticks including Le Creuset's non-stick line (which is very nice). The most long lasting, best performing pan I've ever tried was the Ninja Neverstick. It takes light abuse and looks perfect. I baby my Le Creuset and it still gets scratched up. I'll try an OXO sometime but that stupid cheap Ninja cooks evenly, never sticks and cleans up perfectly. Who knew?
