    When I watched this 3 years ago, Alton’s statement about how the food people buy brings him down resonated with me. To this day whenever I pick up something up at a grocery store or look down at my cart I wonder “What would Alton do?”
    By and large, this has greatly improved my diet’s quality.

      I have anxiety disorder, and frequent at that, in this time of quarantine the panic attacks are more frequent. I gotta say you're right on the spot with your observation, cooking has become sort of a meditation exercise for me, it helps me relax and deal with the disorder.

    I love how Alton strikes on one of the tenets of hot saucing: You can either have a good hot sauce or a hot hot sauce. Anyone who makes a spicy hot sauce doesn't seem to care about the flavor, and anyone who makes a flavorful hot sauce doesn't really care about spice as much.

      Although I enjoy hot sauce from time to time, it's not just the heat. It's the flavor that adds to the dish. I'm not an expert but the flavor then the heat, for me, is what makes a good hot sauce

    Alton's performance here is a fine example of why he is my all time favorite foodie/chef. He's the only one who has been on the show to discuss the actual flavors of each sauce. Every single other guest strictly focuses on the heat level.

      Well, this is how you can tell the spice lords apart from those that don't seek out the hot sauce... A spice lord will tell you about the flavor behind the heat, others feel too much pain to taste anything...

    I've watched almost every episode of, "Hot Ones" that has been released, and I must say, Alton Brown is by far my favorite one. He's awesome, I identify with him so much in the attention to detail. Now I want to research every single thing this guy has ever done, I could listen to him talk about anything on his mind.

    That man taught me at least 50% of what I know about food. I'm not talking about how to cook, but about food. Good Eats was amazing, because you don't walk away with a recipe. You walk away with insight.
    Any other show would teach you how to make hot chocolate, Altons show taught you how to make chocolate. Who invented chocolate. When it's best used. What to look for in quality. Why it's ideal for a hot dairy based beverage. It was like understanding ingredients, was *way* more important, than the recipes you use them in.
    +Edit. IDK how many of you know this, but IIRC Alton wasn't originally a huge foodie, but rather a theater/film-making nerd. So I guess cooking as a hobby, but *passion* for creating good television, was a perfect combination for inspiring a generation. You never know where life will take you, eh?

      I absolutely agree with you.
      I find myself often looking for inspiration, and a lot of chefs will post recipes like "orange and licorice-infused braised short ribs with apple truffle demi-glace." When I want to know how to just cook the damn thing normally, but give it that class and excellent flavor of someone who knows what they're doing, I go to Alton.
      He's never failed me.

      I think the flavor profiles he detailed afterwards were more impressive than just the act of sipping out of the bottle. It's the reason this is probably my favorite interview on Hot Ones.
      Gordon Ramsay should take notes from this guy.

      @Dylan I think it's less about shilling and more about ,"Hey, i'm on their show, I might as well comment on their sauce" and perhaps their sauce is pretty good, granted I haven't ever had any of the Hot Ones sauce. I just wish Alton would of put his input on why 'The Last Dab' wasn't higher on the list, maybe throw in some suggestions on how to improve it.

      @@thestupidskunk530 cold olive oil in pan, put a lot of garlic in (can also add some turkey bacon) , and than simmer it until the garlic infuses the oil. Put some chili flakes in. Add pasta with some pasta water. Finish with lemon juice and optionally some parsley and parmesan.

    There's something... Transcendent about Alton Brown. He's one of those super intellectual people who thinks about things on a different level than the average person, but he hasn't lost his humanity for it. He still has that sort of playfulness and lust for life. He has convictions, but he'd rather educate than preach or resign to the inevitability of ignorance.

    When I was a kid, I didn't watch cartoons, I watched Food Network with my Mom. I LOVED Good Eats, Alton Brown was my childhood hero. It was really fun watching him, especially with him being as knowledgeable and honest as he is

    Just watched this episode back to back with Gordon Ramsay and the difference between the two men in both the way they conducted themselves and the way they handled the spice was night and day. Alton is a class act and Gordon is... Gordon.

    The fact that Alton Brown mentioned Baubette's Feast as the best culinary movie shows just how intelligent and seasoned he is when it comes to the lore of all food. I fell in love with that movie after watching it. I also agree that Ratatouille is a top three on food movies too. Throw in Chef and you got yourself a trio worth watching.

      Well, Thomas Keller was a consultant on Ratatouille. He created the restaurant's menu in the movie. The titular dish is based on the recipe he uses at The French Laundry. The Pixar animators also visited the kitchen there & did some mise en place to make their animation more realistic. If you watch the movie on DVD, there is a bonus feature that includes him.
      I wonder what Alton's top 10 foodie movies are? His food-on-film list from 2016 had 6 movies. I agree w/ Eat Drink Man Woman being up there. It obviously pre-dated Ratatouille's release. I wonder if he'd put The Menu on his list? Bummed Tampopo wasn't on his list. Como Agua Para Chocolate/Like Water for Chocolate should also be a contender. I'd also consider Jiro Dreams of Sushi, but that's a documentary so maybe not subtle enough.

I primarily love its main storyline (which also features actor Ken Watanabe in his younger days). I don't care as much for most of the other short stories in the film.
      The Netflix series Samurai Gourmet is also worth watching -- a charming look at a newly retired man in Japan who finally has the time to rediscover and experience the foods from his past.

      So many guests on hot ones have said that
      I think in fresh sauces or dishes they use raw chiles and other spices so it’s spicy and flavourful but with hot sauces they want them to have a decent shelf life so it’s just extract and vinegar to preserve it

    I just want to say I enjoyed the entire interview, but what I just wanted to point out was at 23:12, Elton had a genuine big almost belly laugh! I like how he enjoyed the Hot Ones sauces more than a lot of the others.

    It's an older episode but out of all the episodes I've seen Alton is the only guest I've seen that completely maintained his composure thru the wings of death.       The first five seasons of Good Eats are to this day the best primer on everyday dinners ever made. I was 22 when the show premiered, and it helped me get away from my mom's bland, flavorless, over-processed queasine she served when I was a kid.

    Alton was the man who inspired me to become a real professional Chef. His "Good Eats" program gave me something to work at after leaving the Marines. He was so intelligent in how he explained everything. It made me need to learn and know more.

    First off, I applaud the way Alton maneuvered some of the questions to a different area, when he didnt want to answer the question. He is such a unique person. I always love watching Good Eats and Iron Chef. His commentaries and teaching skills are gold platinum. Now I want Alton to give me a list of groceries I should be buying. That would be so nice.

      @@Haltfire302 but I do get what he is saying- in philly, too many crappy places do cheesesteak, in kc, there is a lot of subpar bbq, etc. there are the few places that do their local cuisine right, and then a ton of others just trying to cash in and do it cheaper/faster. i cannot comment on buffalo, but i bet it also has a few subpar wing places.

      azzwort sometimes certain batches taste different or certain spices are more pronounced. My friend has a bottle of the last dab that isnt that spicy, my bottle is very spicy.

      Alton is my favorite food channel personality. I watched him back during Good Eats, when I was a young girl (until my parents changed the channel). I love science and cooking and Good Eats was the best show in the world in my eyes.

    I was fortunate enough to be on stage with Alton during his Eat Your Science tour. Amazing experience, so much fun. I've been a fan of his since the first episode of Good Eats. Amazing man.

      I actually missed the Alton hype train. I only got into food media later on, but I remember seeing him a couple times when he guest stared on Mythbusters (I was an avid fan) so I knew him as the "funny food guy from mythbusters"

    Love that he actually mentions flavor. So many people act like certain Hot sauces are great just because they're hot.... but who wants to eat wings with no great flavor for their tastebuds? Like don't sit there and tell me you're eating those to go through pain.

      More like he’s able to tolerate the pain enough to appreciate the flavor profile. Unfortunately, hot sauces in the sky high SHU range are wasted on people with a low threshold for pain, and there’s nothing to be ashamed of if you can’t tolerate extremely spicy food. Because the capsacins in chilis act on the same receptors that transmit the pain felt from burns and skin abrasions, so if you’re sensitive to pain, for sure you can’t enjoy a powerful chili sauce.
      Which is why I love how Alton calls out the higher SHU sauces as “hot but not good”, because at that point, the hot sauce is just made to be hot for those that like the heat. But then you have people like Alton who can tolerate the heat but as a result realize how poor the taste is.
      And another comment on just how wonderful Alton is, you’ll notice he only starts drinking his milk when he starts feeling the heat. And then just before he takes the last dab, he takes a sip of milk. He’s actually prepping his mouth to wash out the heat but keeping it long enough just so he can savor the flavor. So he was doing us a favor by balancing out the heat so that he could actually interrogate the flavor of the sauce. Such a brilliant man.

      Because capsacins is capsacin, its just heat, the flavor comes from the rest of the chili.
