Gloves are not used in the kitchen for many reason. Mainly is for hygiene, since glove residue have a chance of contaminating the food, and also chef's are more likely to wash their hands if not wearing any gloves. We wash our hands every time we are about to prepare a new dish.
It certainly is not...Hospitality is the worst paying industry on the Planet, hours are horrible, mostly split shifts, always work when the rest of the World enjoy a weekend and or a Public Holiday off work, very stressful working conditions and most ppl.in charge are clueless and at least 50% of your workforce(front of house) is untrained and useless
Kitchen assistants are expected to thoroughly wash the vegetables, dry them and cut them. They’re at the beck and call of several cooks/chefs.
