I never take off the plastics. Just use the spring tool for the springs

why not removing completly the pan to avoid a mess? Can it be removed?

While it is possible to remove it, its highly time consuming and more costly. Therefore its just not practical. If it's done right it shouldn't be a significant mess. Less time wrenching. More time riding.
