Just got back form a trip to Spain and had many breakfasts in Madrid. I came looking for this recipe because it was so good. I'm so happy to hear it's so simple
I actually did makes this! So easy! I made it in my Nutribullet with one tomato, added some Sun Dried tomatoes (to help thicken it a bit as the Nutribullet tends to liquify, and added jarred, minced garlic. I only used a 1/4 cup olive oil as it was just for one person. I then ran to the store and bought the darkest prosciutto I could find. After getting home , I assembled the dish on the freshly backed and toasted sourdough and it was SO delicious! A great way to get a serving of vegetables (or fruit in this case) in one's diet. I'm having it again as it made a small bowl full but having with a fried egg too (in olive oil of course!).
As a hispanic from Chicago we eat something similar for lunch with a bolillo or baguette where we add ham tomatoe avocado salt etc.. depends on your liking and we almost make it into a sandwich but its very similar ingredients minus the garlic and olive oil. almost between a mexican torta or spanish breakfast! ill be sure to add garlic and olive oil next time thanks!

I messed it up. 😕 it came out soupy. I think I added too much olive oil? I will try it again for sure. It was still good 😊

Yes. A few things about the flour used in the Mediterranean. It tends to be less processed and it isn't GMO. It also tends to be sourdough.

bread has to be whole grain for better health.
The bread in the Mediterranean tends to be white, but still fairly whole grain. It is also often sourdough.
