Because eventhough he feels that he's not worthy of a slayer or hashira, he knows that he had to live on for the sake of his sister and Sabito, which is the advice Sabito gave him to follow instead of him wanting to die. Giyuu followed that properly and even became a hashira but he still couldn't accept himself as a slayer or hashira. Once Tanjiro triggered his memories, now Giyuu can get a much more clear picture of Sabito actually meant to say and accepted himself as a hashira.
