Ok. So I just did the exact same thing last night. I prepared a PowerPoint presentation for my husband so that he could see all the pros and cons of each resort!! Hilarious.
In the future, try putting in different party sizes for dining reservations. I do that all the time, and then I just immediately adjust my party size back to the actual amount. Different sizes always make for more time availability!
Oh also, I had the same issue with dining. 0 reservations for Via Napoli 60 days out but we set up an alert, got it, and then when we got there, the restaurant was nearly empty... Super weird...
