  • Little to no prep means this soup is super easy to make! Simply dump everything into the pressure cooker (or a pot on the stove), add your favorite seasonings and in about 30 minutes you will have a delicious, hearty, and filling soup! Get creative with the leftovers!     This soup reminds me so much of the love my grandfather used to pour into me- This soup with a bit of buttered bread feels like home. It's incredible how something so simple can invoke beautiful memories.

    Lol! I do this all the time! It’s one of my hubby’s favorites! We sometimes get really lazy and use frozen soup mix veggies! If I have some cabbage, that goes in! A can of fire roasted tomatoes and a squirt of tomato paste, yup! We usually don’t bother with the pasta and load up on veggies! It’s simply amazing!😋😋

    I make German Potato Soup (my grandma's recipe) and I never precook the beef. I add it in the last 15 min if over the stove. This looks great.

      Thanks! I had a German potato soup once and loved it! When back to the same place to get it again so I could try to duplicate it and they had made it completely differently. Actually, she originally didn't have ground beef in it (depression era), however, when she made it in later years and my mom made it with ground beef, then eventually, my sister added cabbage to it. I will send you the original recipe. Very simple, it brings back fond memories of my mom and grandma.

    Great soup . Can you make stew with the same recipe just reduce the liquid ? Or use the same amount of liquid and just thicken it ? Thank you for your wonderful recipes

      It's not as rich as a beef stew usually is, but you absolutely can decrease the liquid amount and combine the fat with some flour to thicken it.

    Thanks again for sharing such a delicious and simple recipe. I may try to make this today with whatever I have in my freezer. My ground beef is frozen, so I will have to thaw it first, but that is simple enough. Just toss only the frozen meat with a cup of the broth, and probably 2 minute cook. Then break it up and add whatever veggies I have.

      Ok, so I started out thinking soup because of your inspiration, but I only had broccoli. So instead of soup, I ended up just thawing the ground beef, adding Asian inspired ingredients, and not a lot of broth, and the broccoli. It was pretty good, even though it turned out nothing like what I had started out making. But that's the joy of cooking with what you got. I just thank you for giving me the idea to use the ground beef today, because I was just debating what to make, and that was just the inspiration I needed! And I will definitely try your version in the future. I especially love the curry idea. I think that may be the answer to this squash soup I made that I didn't like the taste of at all, I think adding the curry ingredients will do the trick. Thanks again! 😁

      You are! Just add in small amounts at a time of the spices you want to use until you get it perfect for you! Sometimes I'll take a little bowl out and make that my test bowl so I don't accidently ruin the whole pot if I use too much or the flavors aren't meshing. Once you get your small bowl the way you like it, then you would add those seasonings into the pot, but you will need to add more of course. I usually start with 4x what I added to the small bowl and go from there.

    Better than Boullion *sauteed onion* would be amazing in that soup.
    I love using like pork tenderloin bite size in this type of soup, because pork seems to have so much more flavor than ground beef or beef..

    We could possibly make this into lasagna soup, but I'm not sure of the changes needed. Can you help? I usually put the ricotta on top of each bowl.

      I would skip all the vegetables, use green peppers, onions, and maybe mushrooms instead. Use fire roasted tomatoes with the broken lasagna noodles and some beef broth. Thicken it at the end with tomato paste if desired. I would add some ricotta cheese to the soup for flavor and a dollop on top with some melted mozzarella/parmesan.

    I'm watching this thinking, no potatoes, less liquid, thickened with corn starch, served with potatoes mashed with beef dripping instead of butter, is exactly what we Scots call mince and tatties...haven't had that for ages! And my mouth is watering! 😋

    I am very "pressure cooking naive." If I wanted to add a can of diced tomatoes, would that work ok?

    @The Salted Pepper looks so good. Could I use a bay leaf in the pressure cooker or does that do too much for that to that spice?
    I love the way you can take the meal and change up the leftovers to a new meal. Who would know? We won't tell 🤫

      I add a bay leaf as my Grams would always add one (or 2) to her vegetable soup when she made it. So I always do now too! 🥰

    Do cook times differ with different instant pots? I noticed you used 2 minutes

      Not really. The size of the pot can make a slight difference in timing with some recipes, but not this one.

      You can do that and as long as they are small enough, they should cook and tenderize during the time to pressure and short cook time.

I’ve been wanting to make French dip sandwiches and that’s a good meat to use leftover in vegetable soup along with the broth. I love your show and thank you so much for replying! 🥰

    I use ground beef all time for vegetable soup I use different vegetables than you did.

      Except for chili and taco soup, I never think to use ground beef. The best thing about soup like this is you can use pretty much what you have on hand!
