What you called Baingan Tawa Fry, is one of tne traditional dishes of Maharastra. We call it " Vaingeye chi Kachri or Fodi". In almost all maharastrian marriges it is served along with " Batate chi Kachari." In any case , it is really a very tasty dish. Thanks for uploading it.
