Pantry Challenge~Week One

- Come along with me as I join in on the #threeriverschallenge and work my way through the food we have preserved and stored from our garden, foraging, local farmers and on sale grocery items. I will allow a weekly grocery budget of $50 for dairy and fresh fruit and vegetables. I usually spend $150/ week for our family of 3. Let's see how much money I can save and how much I can use of our food stash!

Chocolate Pudding Recipe:

Chicken & Broccoli Recipe:
2 cups cooked chicken (cubed)
1 small head broccoli (roughly chopped)
2 small carrots (chopped)
3 cloves garlic, minced
1 small piece ginger, minced (about an inch chunk)
half of a small leek (or onion) sliced
1 tbsp butter
2 tbsp's olive oil
1/4 cup flour (all purpose)
2 cups broth
1 cup cream or half & half
salt & pepper to taste
....sauté garlic, ginger, leeks in butter and oil. Add carrots put lid on pan and let carrots cook for about 5 minutes (or until slightly tender). Sprinkle flour over mixture and stir until combined. Add broth and cook until slightly thickened...add cream, salt and pepper, chicken and broccoli. Cook for an additional 5 minutes until warmed through....serve over cooked rice.

Hi Billy! Aren't these prices ridiculous?? I was just at the feed store after work, and I noticed that bales of shavings went up again...they were $6 last year, then went up to $8.50 and now they are $10...chicken feed is up too! We are doing the Threeriverschallenge too. I just found your channel, great job using up what you have and creating great meals!!! We are also trying to stick to meats, diary and sale items. Last year we were able to spend $100 or less a month for two of us, and we had a lot of fun making videos...but this year, since two of our boys moved back home, we are just keeping our budget reduced.

Your dinner looks great! Love using what we have creatively. My pantry challenge is to really stay informed about what I do have, what I should have and what I'd like to have. Did pick up some fresh local eggs to freeze today ( yes not pantry but storage!)
Your pudding dishes are beautiful! I have 6 that my mom always used. Chocolate pudding is possibly my favorite comfort food.❤

Thank you about the pudding dishes too! They are quite pretty...they were my husband's Gramma's dishes and I love them! Chocolate pudding reminds me of Sundays growing up...it was my job to stand on a stool and stir the pudding so it wouldn't burn on the bottom of the pot. I love those days and the memories!
