    I see this old video is taking off for some reason so I just wanted to come here and say the baking time may be less if you live at sea level. Roasting/baking at 6200 feet elevation certainly changes things.

      Yeah, water boils at 200º F instead of 212º at your altitude. How does that affect things like cooking pasta or making fudge?

      for me one of the quickest and most effective way is to put it on high heat in the microwave for like 40 seconds, which keeps it bright green without any further more water content, then searing it in a ripping hot pan to evacuate any exces moisture, then hiding it with a little bit of oil for browning and then add the aromatics of your choice. nice channel. cheers from Norderney

      I give my kids steamed broccoli with butter, garlic salt & Parmesan ...can’t lose. But this will give me some much needed variety-making it in 20 min!

    Thank you for sharing.
    I season the broccoli with a bit of cayenne pepper and a pinch of smoked paprika as well as salt and pepper and put more oil and toss. I do change the season every now and then. But I put them on the barbecue and grill them. Broccoli is not the only vegetable on the barbecue, so are large chunks of mushroom pieces. Mushrooms are going on the hamburgers and the crunchy broccoli are side dish for the hamburgers.
    Yummy in my tummy!

    so refreshing to see someone reccomend the stalk! i love using it -boiled with carrot or roasted as you did here. i wonder if you ever made crumbed califlower florets? if not please try it its a fantastic veg and even a fingerfood to serve with mini dimsum etc. just boil, cool, crumb and fry. thanks for the content been binging your channel and i love it

    I just discovered this channel and it's honestly incredible, both these videos and I'm assuming the more recent ones with the table smacking XDXD. I love to cook and try to figure out how to extract flavor and the way you explain every detail is so educational.     I’ve tried your Brussels sprouts recipe already and they are delicious! I will try this next. I’ve only boiled or steamed them and eaten them with sunflower oil, salt and lemon juice so far, but this looks delicious. Also, I didn’t know about peeling the stalks of broccoli and eating them, so thank you for that. I love your channel!

    I always eat the stalks ~ usually don't bother to peel them. Sometimes I cook them w/ the rest of the broccoli, but more often than not, I just slice and snack on it while I'm cooking. They're great dipped in hummus. Also, my dogs love raw broccoli stalks.

    Blanching vegetables means that you are putting them in ice water right after you boil them to stop the cooking process. You were just boiling them.

      Yea that would be great with the sesame oil good call. I usually go olive oil with lemon juice and garlic powder. Salt and pepper. And finish with parm.

    Came upon this video of you: your demeanor is so different now compared to two years ago. You've really laid on the enthusiasm this past few months instead of being more matter-of-fact (which was still very watchable - loved the pause to discipline your dog) Didn't see a pock-marked fridge in those days!     My mother used to make a sauce for broccoli from about a tablespoon of mayonnaise and a teaspoon of white vinegar. It brought out the broccoli flavor and cut the bitterness. I loved it, and still love broccoli.

    Gotta try this…really like preserving the bright green color all the way through the roasting time. Also, I always pitched the stems. I’ll peel, slice, blanch, and roast them next time.

    I've also blended the stalks a few times into a puree, it tastes just like an avocado pear when blended into a puree. I'll definitely try roasting the broccoli tonight

    My thoughts on training dogs to not bark, or to reduce barking. Its understandable if they are indoor dogs I suppose. But all my dogs have been worker dogs on my land or my families. Their barking reduces the chance of bobcats and hogs coming into our land. Which helps a lot! Our dogs also let us know when someone trespasses on our land. ❤my pups!

    I've been peeling and eating the broccoli stems for years but they almost never go into the broccoli dish. I just can't resist the temptation to eat them raw. They are delicious! As for this recipe, I bet it would be great with a few red chili flakes sprinkled over. I usually steam broccoli then toss it in extra virgin olive oil with some salt and chili flakes, a quick, easy and delicious way to prepare broccoli.

    I've done blanching on broccoli and brussel sprouts which came out delicious thanks to this channel. I got to say though, that dog did not seemed to thrilled about getting a piece of broccoli.

    It's much easier and less wasteful to actual PEEL the broccoli stalks as Jacques Pépin does which just requires a paring knife. Simply go to the base of the stalk, cut below the peel and then use your fingers to strip it off the stalk. It helps if you pick broccoli with thick, straight stalks. Just did this a week ago and threw the peel in a bag with some wilted celery that I used the next day for making stock (or freeze it for stock later).
    If you are sauteing the broccoli there's no need to even peel the stalks, just cut it up and start it cooking before the florets to give it a little extra time to break down the fibers in the stalk. A friend only eats this part and lets her BF & step son have the florets.

    Catching up on these old videos. It’s totally coincidental but I always seem to be thinking about what Chef is featuring. I have several heads of broccoli in the garden that need to be harvested in the next couple of days and we’ll be having lots of roasted broccoli 🥦 on the table!

    that is a lot of extra work. JUST heat oven to 400 degrees . Put broccoli in plastic bag. Pour in olive oil . Shake bag to coat broccoli . Cover cookie sheet with parchment paper. Spread broccoli on cookie sheet. Salt & Pepper the broccoli and sprinkle spices on it ( choice of : paprika, dill, dried chives, etc). Roast in oven for 15 minutes, turn over for 15 minutes more. Allow to rest and enjoy. EZ clean up.

    Throw some minced garlic on there a few minutes before it's finished roasting, then sprinkle some grated parm and put it back in the oven. When it comes out, a squeeze of lemon juice is all it needs. Oh yeah.

    Cannot wait to do this. I think the only change I will make is that I will decrease the amount of oil and then ad a tablespoon of butter for the last 10 minutes or so

    Just wanna say to everyone boiling the broccoli is a bad idea just because all the nutrients from the broccoli ends up coming out and being inside the water so you’re eating broccoli without the beneficial Nutrients

    I trim the stalks, cut them into matchsticks and then coat them raw in a vinaigrette of balsamic vinegar, olive oil, black pepper and sea salt. They need to be served immediately, because the salt draws out the moisture, but people go mad for them as a pre-meal snack!

    over complicated. I simply cut it up, olive oil, salt & pepper and roast it...400 degrees and never touch it for 30 min. perfect every time.

    Preheat a 425 degrees oven. Oil, salt, and pepper the raw broccoli. Roast on a lined sheet pan for 20-25 minutes (until the desired color). Eat.

      Works but not as well as blanching beforehand, for all the reasons he mentions here. Helen Rennie also has a good video on the same technique...
