Exactly , i have been to this outlet last year before covid. I went there with my wife and brother. My wife she is not from West Bengal and i had bragged a lot about kolkata biryani to her. The biryani was so dry and old chicken was given to us, chicken was dry and very tough and gravies were very bad . So we cdn eat the whole thing and left it . This people are pathetic. Food is horrible...... It was her first impression of kolkata biryani and she hated it... I don't know whats wrong with them....
I hope you treated her to Park Street Siraj Biryani later to change her opinion
This happens when chef uses excess amount of DALDA,which is very very unhealthy.
Supervisor বললেন "আপনাকে fresh খাবার দিচ্ছি"। এই কথাতেই তো গলদ। তার মানে ওরা ফ্রেশ খাবার দেয়নি।

Clearly they have used dalda/palm oil due to which that mutton chaap became became dry and hard.the reason being using dalda is it enhances taste if you use it in any recipe,but not good for health at all.

Mizra Galib Street er Maharaja Roll Shop Biryani and Chaap .
Baghajatin e shop named Golden Arsalan Biryani.
