You shouldn't have any issues freezing this. The kiddos have an extra sense for sweets so they pop up as soon as they appear. They are disinterested in things not made with sugar. 🤣
Morning Sam! I've done my Mom's Strata recipe for many years. Just a bit different from yours, line pan w/ slices of fresh Italian bread, butter them, use Original flavor breakfast sausage roll & Sage flavor. Mine's w/o onion, red pepper, nutmeg, garlic, hot sauce though. Refridge overnight, then I'd bake it before everyone arrived for Christmas brunch, & an Almond puff & of course many Christmas cookies for dessert😋. I stopped making everything though since my Mom passed, sisters out of state now, brother & SIL passed & daughter celiac 😟, hopefully I can make again one day if anyone visits & I'll try your version cuz no gluten, looks great 😋. I think that you got a tiny piece of egg shell in your bowl. I saw something dark and non-egg like float around when you added the cream. It’s O.K., just extra calcium. If you’re ever looking for a new casserole that will surely impress your boys, I recommend that you look into making a chicken and waffles casserole. There are several recipes out there for you to use for inspiration for your own creation. Finally, whoever loaded the grated cheese into the bowl like that did a very impressive, professional job!!! 👏🏻👏🏻👏🏻🍻🍻🍻 Excellent show!
Omgosh! Since you have chickens, DON'T THROW those shells away!!! Finely crush the shells and feed them back to the chickens...the chickens love them and it boosts their calcium, protein and other minerals. You can even powder the shells and add to recipes...or if you don't want to eat them, you can use them to amend your garden soil. Just don't throw them away!!! TIP: Use a 1/2 eggshell to scoop out errant pieces of shell. The eggshell "scoop" will quickly attract and hold the pieces.

My husband will take them occasionally and put them in the garden. We just use A LOT around here. :)
You should have just cooked the onions and pepper with the sausage.That is an extra step that is not needed.
