I feel like the colours are over saturated though even the Vectorscope YUV confirms that 😳... doesn't look natural at all except their skin tones

Yeah if you listen to the video I deliberately oversaturated the colors not because it's bad, but when it comes to color grading you have the freedom to creative look. There are movies that use bleach bypass coloring very less saturated while others are very saturated.
These are creative choices and this is one of the videos from my color grading course and it's the 5th example.
Others pay attention to every rule others pay attention to how you break the rules without looking to be an amateur
